Why do we love it?

The rare and extremely hard to find Limniona by Domaine Karanika, in its first vintage was released in just a handful of bottles and everyone was searching it, but it was only sold from the winery. This year, we managed to find and book a few bottles, from this uniquely collectible wine, just before its abroad travel.

We'll start by telling you that you should definitely taste Limniona by Domaine Karanika, for at least 2 reasons. The first is that we are talking about the most elegant and up-coming Greek red variety. Limniona is a diva and cannot be tamed by any producer, as it is an incredibly demanding and difficult variety to handle. But if you're Laurens Hartman, then you know exactly what to do in order to get the best out of this demanding variety. And this is the second reason why you should taste this wine. Laurens is a super talented winemaker, dedicated to biodynamic cultivation and local varieties. We haven't tasted even a single wine from his hands, which is not at least perfect, and as far as Limniona is concerned, we're really talking about another level of supremacy. The recipe is well known: perfectly ripe fruit, indigenous yeasts, and maturation in 4th use French oak barrels, for 18 months.

Tastes Like

We will try to describe it as well as we can, but the truth is that it's really inconceivable.

Deep violet color and intoxicating aromas of violet, primrose, red currant, cherry, pomegranate, blueberry and strawberry jam. Vanilla, herb and tobacco notes complement the impressive bouquet.

Velvety and creamy on the palate, with acidity as crisp as biting fresh and juicy berries.

LIMNIONA 2018 - DOMAINE KARANIKA

PAIR IT

Pairs very well with wild boar in wine sauce, braised beef or bbq.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
