Liappis family winery, with deep knowledge of the Thessalian vineyard and the Limniona grape, has shown through its beautifully crafted wines that its winemakers pour their soul into every bottle. Their organic vineyards are located at the foothills of Mount Narthaki in Thessaly, at an altitude of 380 metres.
This Limniona comes from low-yielding vines. Fermentation follows a Burgundian approach, using open oak barrels, indigenous yeasts, and 20% whole bunch fermentation. It then matures for 12 months in old 500-litre oak barrels, adding complexity without overshadowing the fruity and refined character of the variety. The wine is bottled unfiltered, in line with the philosophy of minimal intervention.
