Organic farming, hybrid varieties, vegan vinification and a zero carbon footprint on the environment is a good first introduction to Petit Sauvage Rouge from Pierre & Antonin. The amazing aromas of cherry and raspberry and the impressive earthy dimension when you try it is why you will fall in love with it forever! We mean it!

Pierre Caizergues and Antoin Bonnet are two very nice guys who have always had the germ of wine in them. For years they worked as a negociant, selling wines from other French producers, but in the summer of 2020, drinking coffee somewhere in New York, they decided that the time had come for something they should have done a long time ago. To create their own wine. Finding the area wasn't difficult at all, as they both hail from the Languedoc, so suddenly the area caught their eye! Their winery is located in a fairytale place, the village of Carcassonne, with the largest medieval fortress in the world, overlooking the Pyrenees mountains.

Both in the vineyard and in production they follow exclusively sustainable methods, with absolutely no use of chemicals. For this reason they chose to grow hybrid varieties created by grafting different varieties to be disease resistant. Very interesting is that everything they use for their wines is located within a radius of only 80 meters around their winery. Light bottles from Albi, corks from Roussillon and natural wax from their own bees, have taken the word "local production" to another level!

Petit Sauvage! Rouge is produced from the Cabernet Cortis variety, which is a cross between Cabernet Sauvignon and "wild varieties" Aestivalis and Rupestris. And this "wildness" means tremendous vine disease resistance, resulting in zero sulfite use in winemaking! The juice remained 9 hours in contact with the pips and then remained for 5 months in conical tanks.

Tastes Like
In the glass, is a deep ruby. Very expressive nose with aromas of cherry, blackberry, raspberry, cassis, and blackcurrant. The notes of pine, thyme, and eucalyptus give a sense of freshness and complexity.
 
In the mouth, it has a medium (+) body with balanced acidity. Jammy fig, raspberry, blackberry, blueberry, and plum are framed by notes of rosemary, thyme, and an earthy feel. Well-crafted tannins create a very enjoyable whole. The aftertaste is long and fruity.

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
