Pierre Caizergues and Antonin Bonnet are two very nice guys who have always had the germ of wine in them. For years they worked as a negociant, selling wines from other French producers, but in the summer of 2020, drinking coffee somewhere in New York, they decided that the time had come for something they should have done a long time ago. To create their own wine. Finding the area wasn't difficult at all, as they both hail from the Languedoc, so suddenly the area caught their eye! Their winery is located in a fairytale place, the village of Carcassonne, with the largest medieval fortress in the world, overlooking the Pyrenees mountains.
Both in the vineyard and in production they follow exclusively sustainable methods, with absolutely no use of chemicals. For this reason they chose to grow hybrid varieties created by grafting different varieties to be disease resistant. Very interesting is that everything they use for their wines is located within a radius of only 80 km around their winery. Light bottles from Albi, corks from Roussillon and natural wax from their own bees, have taken the word "local production" to another level!
Petit Sauvage! Rouge Pierre & Antonin is made from the Cabernet Cortis variety, a cross between Cabernet Sauvignon and the hybrid white grape Solaris. This more 'unusual heritage' of Solaris means exceptional resistance to disease — and therefore, almost zero use of chemicals in the vineyard and the winery! The juice spent 9 hours in contact with the grape skins, then matured for 5 months in conical tanks.after that it was bottled with almost zero intervention and the result is a juicy and spicy red, perfect for the summer months!
