Lapis Luna Pinot Noir could very well be the secret password of a private mystical club tucked away in a little alley of California, getting you into otherworldly pleasures. Reality isn’t far off, as this is a juicy Pinot Noir that can truly introduce you to the world of New World wines—with its generous character and unbeatable value for money!

The Lapis Luna winery is located in Mendocino, on California’s North Coast. Their motto is what makes them stand out: “A rare and exceptional experience, like a blue moon.” In English, the expression “once in a blue moon” means something extremely unique and rare—just like the frequency of a blue moon appearing. A blue moon is the second full moon within the same month, a very rare occurrence since the moon becomes full every 27 days. Now that we’ve had our astronomy lesson, let’s get on with the good stuff!

The Lapis Luna Pinot Noir comes from selected Pinot Noir clones originating from Pommard in Burgundy. After harvest, the grapes undergo a 3-day cold soak followed by cryo-maceration. This process gives the wine intense color, structure, and at the same time preserves its freshness. It ferments in stainless steel tanks and then matures for 8 months in oak barrels, 10% of which are new.

The Lapis Luna Pinot Noir is juicy, spicy, with nice tannins and plenty of fruit. What more could you want from a bottle of wine?

Tastes Like

It has medium ruby color and intense aromas of cherry, strawberry, blueberry and raspberry jam. Hints of leather, licorice, pepper, vanilla, tobacco and tea leaves complete the special set.

In the mouth it has medium body, balanced acidity and medium but ripe tannins. Raspberry jam, strawberry, black cherry and blueberry are mixed with notes of vanilla, pepper, cedar, black tea, tobacco and smoked meat.

PAIR IT

Pairs very well with beef carpaccio, amatriciana pasta, mackerel with tomato sauce in the oven, pizza with brie and mushrooms

Rigatoni with tomato, pancetta and goat cheese

  • 4 mature tomatoes of medium size
  • Olive oil
  • Salt according to your preferences
  • Freshly ground pepper
  • ½ cup chopped pancetta
  • 150 gr goat cheese cut into cubes
  • 500 gr rigatoni
  • Parsley leaves for serving

 

Preheat the oven to 180 ° C.

Cut the tomatoes in slices and spread them on a pan. Season them with olive oil, salt (at will) and spread the chopped pancetta all over the pan.

Bake in the oven for about 20 minutes until the tomatoes soften. Place the pieces of goat cheese on each tomato and turn up the heat at 250 o C. Bake for about 10 more minutes until the pancetta becomes crisp and the cheese gets a golden color.

Boil the rigatoni according to the instructions of the packaging (al dente) and drain well. Place them in a large serving bowl, add some olive oil and mix them so they do not stick together. With a spoon, put half the tomatoes with the melted cheese and the pancetta over the macaroni, add a little olive oil and stir with the rigatoni until the tomatoes are dissolved and mixed with the whole.

For serving, add the remaining tomatoes with the melted cheese and pancetta on the side of each dish. Sprinkle with freshly ground pepper and add parsley leaves.
