Why do we love it?

Lapis Luna Pinot Noir could be the secret codeword of a private mystical club in an alley in California that introduces you to cosmic pleasures. The reality is not far from that as it is a juicy Pinot Noir that can initiate even the most skeptical of New World wines, with its exuberant character and the inconceivable value for money ratio.

Lapis Luna Winery is located in Mendocino, on the North Coast of California. Their motto is what sets them apart: we deliver an experience as rare and extraordinary as the blue moon, with each bottle. There is an expression in English (once in a blue moon), which means that something is extremely unique and rare to happen as the blue moon. The blue moon is the second full moon that may happen in the same month, a fact that is extremely rare since the moon fills every 27 days. After taking this astronomy lesson we are now moving to the best part.

Pinot Noir Lapis Luna comes from selected Pinot Noir clones from Pommard. After harvest, the grapes undergo a first warm soaking for 3 days and then undergo cold soaking. This gives the wine an intense color, structure but at the same time ensures freshness. The wine is fermented in stainless steel tanks and then it aged for 8 months in oak barrels, 10% new.

Tastes Like

It has medium ruby color and intense aromas of cherry, strawberry, blueberry and raspberry jam. Hints of leather, licorice, pepper, vanilla, tobacco and tea leaves complete the special set.

In the mouth it has medium body, balanced acidity and medium but ripe tannins. Raspberry jam, strawberry, black cherry and blueberry are mixed with notes of vanilla, pepper, cedar, black tea, tobacco and smoked meat.

PINOT NOIR 2018 - LAPIS LUNA

Pairs very well with beef carpaccio, amatriciana pasta, mackerel with tomato sauce in the oven, pizza with brie and mushrooms

Rigatoni with tomato, pancetta and goat cheese

  • 4 mature tomatoes of medium size
  • Olive oil
  • Salt according to your preferences
  • Freshly ground pepper
  • ½ cup chopped pancetta
  • 150 gr goat cheese cut into cubes
  • 500 gr rigatoni
  • Parsley leaves for serving

 

Preheat the oven to 180 ° C.

Cut the tomatoes in slices and spread them on a pan. Season them with olive oil, salt (at will) and spread the chopped pancetta all over the pan.

Bake in the oven for about 20 minutes until the tomatoes soften. Place the pieces of goat cheese on each tomato and turn up the heat at 250 o C. Bake for about 10 more minutes until the pancetta becomes crisp and the cheese gets a golden color.

Boil the rigatoni according to the instructions of the packaging (al dente) and drain well. Place them in a large serving bowl, add some olive oil and mix them so they do not stick together. With a spoon, put half the tomatoes with the melted cheese and the pancetta over the macaroni, add a little olive oil and stir with the rigatoni until the tomatoes are dissolved and mixed with the whole.

For serving, add the remaining tomatoes with the melted cheese and pancetta on the side of each dish. Sprinkle with freshly ground pepper and add parsley leaves.
