Why do we love it?

Juan Antonio Ponce has decided to drive the wine world crazy with his wines. After sweeping the scores with his Bobal wines, he decided to vinify separately an even rarer local variety, Moravia Agria! This is Ponce Buena Pinta 2024 from Bodegas y Viñedos Ponce. A rare red from the oldest vineyard of the variety in the whole of Manchuela. It seems that once again he hit the mark, as it scored 94 points from Robert Parker!

Juan Antonio Ponce, after apprenticing alongside the legend Telmo Rodriguez, returned to his homeland of Manchuela to take over the family winery. He focused exclusively on local varieties such as Bobal, Monastrell, Albillo and Moravia Agria and, through organic and biodynamic farming, brought new life to the region.

Ponce Buena Pinta 2024 from Bodegas y Viñedos Ponce is 100% Moravia Agria, from a very old, ungrafted vineyard on granitic soils. Although the 2024 vintage was warm, the combination of old vines, different soils and early harvest produces a wine with energy, freshness, concentrated fruit and a distinctive mineral dimension. In order to preserve the characteristics of the variety and the vineyard, the winemaking is gentle. Fermentation in 4500L oak vats with indigenous yeasts and whole bunches, followed by ageing for 13 months in 2500L oak foudres. Finally, it is bottled unfiltered and with no further intervention.

Tastes Like

In the glass, red fruits dominate such as cherry, raspberry and cranberry, complemented by notes of bay leaf, clove, hints of smoke and wet stone.

On the palate it has a medium body, refreshing acidity and fine tannins. Ripe red fruits, spices, herbs and minerality create a delightful whole, full of freshness.

Manchuela is a lesser-known Spanish region inland Valencia, where the Bobal variety works wonders. There may be a few defenders in this area and even fewer winemakers dedicated to the Bobal variety,
but Juan Antonio Ponce is certainly the leader, and his wines synonymous with the expressions of this rare variety.
Juan Antonio Ponce was Telmo Rodriguez's right-hand man for 5 years and started his winery in 2005, at the age of 23. Biodynamic cultivation in the vineyard and winery a natural approach, using low levels of sulfur dioxide. Its philosophy is to produce natural wines, with wild pastries, to respect the local Bobal variety, and to express its terroir.

PAIR IT

Pair it with grilled burgers, a classic pasta with tomato sauce and basil or red lentils with curry.

Casarecce with tomato sauce and tuna

300 gr. Casarecce pasta
150 gr. tuna in olive oil
1 onion
2 cloves garlic
1 green pepper
3 ripe tomatoes
1 teaspoon tomato paste
1 small cinnamon stick
1 clove
1 bay leaf
40ml olive oil
Fennel
Freshly grounded pepper
Salt

1. Chop onion, pepper and garlic into small pieces. At the same time, grate the tomatoes in the grater and boil the pasta in salted water.

2. In a frying pan, sauté in olive oil the onion, garlic and pepper for 3 ′. Then, add the fresh tomatoes, tomato paste, spices, bay leaf, salt and pepper.

3. Simmer the tomato sauce over low heat and just before it thickens up, add the tuna and the pasta. Mix well and remove.

4. Serve with chopped fennel and grated barley rusk.


Recipe notes:

-We can add a splash of ouzo, 1 tablespoon is enough
-If we do not want to use fresh tomatoes, we may use 300 gr. tomato juice or concasse
-We can add some cherry tomatoes cut in half towards the end of cooking
-We use the shape of the pasta we like, this sauces tastes better with pasta that do not contain egg
