If you have social media or simply love good food, you’ve surely come across Prosíliο by The Vigneron Project. The reason is that behind Prosíliο stands Petros Dimoulias, the sommelier of Eviva, the ultimate temple of meat. Petros created The Vigneron Project to express Agiorgitiko and the land through a different lens—more minimalistic and more deeply rooted in what the vineyard itself offers. In its debut release, it was awarded a Bronze Medal at the Thessaloniki Wine Trophy, proving that Prosíliο has a bright future ahead of it.
The single vineyard behind Prosíliο The Vigneron Project is located in Titaní, Corinthia, at an altitude of 500 meters. The vines are 30 years old, and cultivation is carried out organically, respecting the natural rhythm of the vineyard.
The 2024 harvest took place in early September, when Agiorgitiko had reached its ideal ripeness. At the winery, the winemaking process is overseen by the experienced Ilias Roussakis. A minimal‑intervention approach is followed, with aging in French and Czech oak barrels for eight months to highlight the character of the variety. Finally the wine is bottled in only 1100 bottles.
