Why do we love it?

Rosso di Montalcino Castello Romitorio is the perfect opportunity to taste the enchanting terroir of Montalcino without spending a fortune! The elegant red fruit, combined with the sour cherry acidity and the silky tannins will make you love it from the first sip.

The Rosso di Montalcino DOC was established in 1983 so that a fresher wine from the same vineyards could be released. Rosso is Brunello's delightful and fruity little brother, but that does not mean that he is inferior! It is the wine that you can enjoy faster (without waiting for years for its tannins to soften) and with more dishes of Italian or Mediterranean cuisine. For us, it is the wine we would like to drink with a rich amatriciana or a juicy pizza capricciosa.

At Castello Romitorio they know all the above very well and put all their effort into the Rosso di Montalcino Castello Romitorio. Sangiovese is picked by hand, at the right time and carefully sorted in both the vineyard and the winery. The wine is fermented and aged in oak barrels for 10 months.

The result has the typical character of the variety, underlined by the Montalcino terroir! Just amazing!

Tastes Like

Rosso di Montalcino Castello Romitorio has medium ruby color and elegant aromas of sour cherry, cherry, strawberry, lavender, rose, basil, cedar, nutmeg, and tomato.

In the mouth, it has medium (+) body, marked acidity, and medium (+) but lacy tannins. Juicy cherry, sour cherry, raspberry, and redcurrant are mixed with notes of flowers, herbs, and sweet spices.

Castello Romitorio

The enchanting Castello Romitorio has several centuries of life, from Roman times to the present day. It was a castle, a monastery, a refuge, a fortress, and then a temple of art. Baron Giorgio Franchetti, a great collector, and lover of art bought the abandoned Castello Romitorio in order to restore it and give it its previous glory. In the middle of the process, however, it was bought by Sandro Chia, a distinguished painter who fell in love with the history and beauty of both the castle and Montalcino. He renovated it and decorated it with works of art but something was missing; the greatest work of art in the area, Brunello. Then he decided to replant the vineyards in the surrounding area. In 2005, Castello Romitorio winery began its glorious course, with a cellar of inconceivable beauty, where statues, sculptures, and paintings are placed among the barrels. 


PAIR IT

Pairs very well with pasta amatriciana, a pizza capricciosa or spaghetti with meatballs.

Spaghetti with meatballs

  • 1 slice of whole wheat bread, cut into chunks
  • 225 grams of counterfeit
  • 1 medium onion, finely chopped
  • 1 portobello mushroom, finely chopped, after removing the stalk
  • 3 cloves of garlic, finely chopped
  • 3 tbsps. of fresh parsley leaves
  • 1 large egg white
  • Salt and freshly ground black pepper
  • Fresh grated nutmeg
  • 2 tbsps. of olive oil
  • 700 g peeled tomatoes in juice, hand-melted
  • 120 ml of beef stock
  • 1 bunch of fresh basil
  • 3 sprigs of fresh thyme
  • 225 g spaghetti
  • Parmesan, for serving, optional

Chop the bread into thick breadcrumbs. Place them in a bowl, add minced meat, 3 tablespoons of onion, finely chopped mushroom, 1 tablespoon of garlic, parsley, and egg white. Add salt, pepper and nutmeg. Mix well, until you get a homogeneous mixture. Divide into, approximately,  20 round meatballs and place them on a plate.

Put the pan on moderate heat and heat up some olive oil. Add the rest of the garlic and onion. Cook them for about 10 to 12 minutes by stirring occasionally until they are softened. Mix tomatoes and broth. Add basil and thyme into sprigs so they can be removed afterwards. Let it simmer for 20  minutes, by stirring occasionally. Add the meatballs and simmer, without stirring for about 10 minutes. Turn the meatballs and leave them for another 10 minutes.

Meanwhile, cook the pasta according to the package instructions in salted water. Serve the pasta by adding sauce, meatballs and as much parmesan as you like. Sprinkle with chopped parsley.
