Why do we love it?

Château de Saint Cosme Gigondas 2022 stands amongst the iconic wines of the Southern Rhône. Awarded 94 points by both James Suckling and Decanter, it is a true gem—an intense, characterful red ideal for lovers of bold, expressive wines. 
 

Located in the heart of the Southern Rhône near the village of Gigondas, Saint Cosme is one of the region’s oldest wineries, with a history dating back to 1490. Still family-owned, it is currently led by Louis Barruol, the 14th generation of the founding family. Since 1992, Barruol has embraced biodynamic farming, reinforcing the estate’s commitment to sustainability and authenticity. The winery’s philosophy centers on expressing the unique terroir and ancient vineyards of the region through traditional winemaking methods. Barruol believes the surrounding landscape holds parcels of land with rare and distinctive soil compositions—an insight validated by consistently high praise from leading wine critics worldwide.  

Gigondas 2022 Château de Saint Cosme is a blend of Cinsault, Grenache Noir, Mourvedre, and Syrah from vineyards over 50 years old. Fermentation took place with whole bunches in stainless steel tanks, while the wine was aged in French oak barrels (20% new and 50% up to the fourth use) and concrete tanks (30%). This gave the wine an explosively aromatic nose, with expressive fruit and accentuated floral and spicy character. It was bottled without filtration and is truly impressive. 

Gigondas 2022 Château de Saint Cosme is a generous and juicy red wine, with all the virtues of Grenache and the exuberant elements of Chateauneuf, but with more refinement and an impressively lower price.

Tastes Like

In the glass, it has a deep purple color and striking aromas of blackberries, black cherries, plums, thyme, bay leaves, dried violet, with hints of pepper, cinnamon, cigar box and oak. 


On the palate, it has a full body with high but silky tannins and refreshing acidity. Blackberries, blueberries, plums, strawberries, and black cherries blend with notes of pepper, cedar, licorice, and tobacco.

PAIR IT

Pair it with a beef fillet with thyme sauce, slow-roasted wild boar en papillote, or aged yellow cheeses like Gouda and Comté.

Wild boar casserole with tagliatelle pasta

  • 1 kilogram of wild boar
  • 1 carrot coarsely chopped
  • 1 celery coarsely chopped
  • 1/2 bunch of fresh onions finely chopped
  • 1/2 bunch of parsley finely chopped
  • 2 cloves of garlic
  • 3 tbsps. of mustard
  • 3 tbsps. of lemon juice
  • 5 allspice berries
  • 1 bay leaf
  • Salt and pepper
  • 200 g olive oil
  • 250 ml red wine (preferably xinomavro)
  • 500 g of tagliatelle

 

Cut the wild boar in portions. Put all the ingredients in a bowl, except olive oil and pasta. Marinate for at least 12 hours.

When we are ready for cooking, remove the boar from the marinade, drain it to leave the many liquids and sauté with the oil until it gets golden-brown. Add the marinade and lower the heat to simmer for 30 minutes.

Transfer them all to the casserole and put it in a preheated oven, at 150 ° C. Stir regularly to keep liquids from sticking. If more liquids are needed, add some vegetable broth.

Boil the pasta according to the instructions (preferably al dente).

Garnish with a little chopped parsley over the plate.
