Why do we love it?

The Tabouri Rare Earths of the Strofilia winery is a single varietal Cabernet Franc that has already won impressions. If you like red wines with an intense fruity character, round and juicy tannins, on a botanical background of freshness, you have just found your favorite! Know that it has become one of ours too.

Strofilia is one of the most historic wineries in the country and its path began in 1980. The common struggles for the future plans of the two electrical engineer friends at the time, Yannis Maltezos and Achilleas Lampsidis brought to the surface a sincere desire of theirs to deal with wine, but not for livelihood reasons. So, 2 years later they made their first amateur bottling at the Maltezou family's wine press. The storfilia that existed there was also the name of their future winery, which was built in the location of Patitiria at Anavyssos. In 2020, the oenologist Yiannis Ligas was added to the team and together they are going through the new era of the winery, which is surrounded by continuous international awards.

Tabouri belongs to the premium bottling series, Rare Earths, which includes only high-quality wines, in very limited bottles. The 100% Cabernet Franc grapes come from the Asprokambos vineyard, located at an altitude of 800 meters. After fermentation with selected yeasts, the wine is left to mature in 225-liter French oak barrels for 12 months.

Tastes Like

It has a deep purple color and rich aromas of strawberry jam, cherry, dried apple, cassis, ripe raspberry, vanilla, tobacco, cinnamon, chocolate, green pepper, lavender, and a soft note of green pepper that gives it a special sense of freshness.

In the mouth, it is full-bodied with very balanced acidity and juicy round tannins. Intensely fruity character, with ripe dense red fruit and floral notes. Tea leaves, lavender, and violet frame the long aftertaste.

PAIR IT

Pair it with braised veal with vegetables, wild boar with plums, and a variety of yellow cheeses.

Beef stew with red wine

  • 1 kg of boneless beef cut into bits
  • 4 tbsps. flour
  • 1 tsp. paprika
  • 2 tbsps. olive oil
  • 1 cup of dry red wine
  • 1 cube beef broth
  • 1/2 tsp. dry thyme
  • 1 bay leaf
  • 1 pack of small fresh mushrooms, whole
  • baby carrots
  • salt
  • pepper

 

 

Wipe the meat with kitchen paper to absorb excess moisture. Stir in a bowl 3 tablespoons of flour, 1 teaspoon of salt, paprika and pepper and sprinkle the meat with the flour mixture.

Sautee the meat in hot olive oil in moderate to strong heat, stirring frequently,  for 4-6 minutes or until it acquires a golden brown color. Remove the meat from the pot. Add the red wine, stirring well to incorporate with the meat residues from the bottom of the pot.

Put the meat back in the pot and add the broth, thyme, bay leaf, and 1/2 teaspoon of salt.

Once it starts boiling, cover the pot, lower the heat in half and allow the meat to cook for about an hour, stirring occasionally. You can accompany your meat with wild rice.
