This iconic flagship wine is produced in limited quantities and was crafted to rival the great wines of Bordeaux’s Right Bank, harnessing the opulent power of Merlot alongside the ethereal contribution of Cabernet Franc. The style of The Emperor unmistakably bears the Papargyriou signature: generous, intensely concentrated, and lavishly rich.

 

Nestled in the hills of Lalioti in Corinthia and the high-altitude vineyards of Sofiana, where vines climb to nearly 850 metres above sea level, the Papargyriou family has spent decades pursuing excellence through exceptionally low yields, meticulous grape selection, and an uncompromising attention to detail. This philosophy has earned the estate a reputation for wines of remarkable concentration, intensity, and outstanding ageing potential. It was within this framework that The Emperor Papargyriou Estate was born, a wine created not merely to withstand time, but to master it.

Merlot forms the heart of this “imperial blend”, contributing abundant dark fruit, chocolatey aromas, and a spicy dimension. A small addition of Cabernet Franc elegantly highlights its floral and herbal nuances. The concentration achieved through late harvesting results in a wine so rich it feels almost chewable, while extended ageing in new French oak barrels cloaks it in layers of spice, smoke, and earthy complexity. The result is a commanding wine that combines power and finesse without sacrificing balance.

Tastes Like

In the glass, The Emperor by Papargyriou Winery reveals aromas of black plum, ripe cherry, and blackberry. With time, additional layers emerge, including cocoa, cedar, tobacco, sweet spices, and delicate herbal notes that hint at its Bordeaux nature.

On the palate, it is opulent and multifaceted, with a full body, generous fruit concentration, firm tannic structure, and vibrant acidity. Ripe black fruits, melted dark chocolate, cracked peppercorns, mint, vanilla, and cedar combine to create a remarkably flavourful and juicy experience.

Pair it with wild boar braised in red wine and prunes, dry-aged prime rib, or lamb shank served with smoked aubergine purée.

Roast beef with spices and red wine sauce

  • 2 tbsps. of peppercorns
  • 2 tbsps. of black or white mustard seeds
  • 2 tbsps. of fennel seeds
  • 1.5 kilos of beef fillet
  • 2 tbsps extra virgin olive oil
  • 1 tbsp of wholegrain or English (preferably gluten-free) mustard
  • 3 coarsely chopped red onions along with the peels
  • A pinch of thyme

For the sauce:

 

  • 2 tbsps extra virgin olive oil
  • 1.5 with 2 tsps of corn flour
  • 2 beef stock cubes
  • 3-4 tbsp red currant jelly
  • 400ml red wine

Two days ago, grind the pepper and the mustard and fennel seeds using a mortar. Brush the fillet with mustard and then roll it to freshly ground pepper. Cover with cling film and place it in the fridge.

Two hours before you start cooking, take the meat out of the refrigerator to reach room temperature.

Preheat the oven to 180C. Heat the olive oil in a saucepan and cook the meat until it gets a beautiful brown color. Use onions in the casserole as the base and place the meat on top of them. Bake for 20 minutes for medium or 35 minutes for a well-done beef.

Remove the beef from the casserole and place it on a platter covered with foil for 30 minutes to keep it warm. Put the casserole on the heat and along with the onions and meat juices, add the corn flour and the beef stock cubes. Stir the jelly and gradually pour the wine while stirring. Simmer until the liquid is reduced. Strain the sauce and remove the onions. Slice the beef, flavor it with thyme and serve with the red wine sauce.
