Rapsani Terra Petra 2018
Rapsani is a region that definitely has a lot to say as it makes the most fruity and velvety Xinomavros. This, in combination with Thymiopoulos' signature, assures you of the perfect result. The precious blend, with a ratio of 50% Xinomavro, 35% Krassato, and 15% Stavroto, originally fermented in stainless steel tanks and then in large oak barrels, where it remained for about 14 months. With eyes closed, tasting Rapsani Terra Petra you recognize the finesse and the "signature" that Thymiopoulos puts on all of his wines.
Naoussa Alta 2020
When you think of Xinomavro, Naoussa comes to mind almost automatically, and the next thought is Apostolos Thymiopoulos. He radically altered the Xinomavro winemaking profile and style, creating the so-called "modern" school where fruit and finesse dominate. Naoussa Alta 2020 walks along the same path and teaches lessons of finesse and balance. While it has a medium to light body, it has incredible fruit condensation and juicy, silky tannins.
Rose de Xinomavro 2013
We have secured the last botles directly from the winery and Rose de Xinomavro 2013 is here only for a litle while, and it bears the signature of - who else? - the pioneer Apostolos Thymiopoulos! The inspiration came from the beautiful evolution of Rose de Xinomavro over time, giving him ideas for an aged rosé. He left the wine to ferment with its indigenous yeasts and selected one by one the second use 500 liter French barrels where it stayed for 12 months. The wine was then bottled and kept in his cellar for another 8 years. He tested it often to decide when it's the perfect time to release it. And now the time has come!
Rose de Xinomavro 2021
Apostolos Thymiopoulos is well-known for his red wines, but if you haven't tasted Rose de Xinomavro, you simply do not know what you are missing! Once again, the subversive winemaker from Naoussa makes a rosé for the long run, that is not meant to be enjoyed only fresh. And that is why he chooses a dark bottle, instead of a transparent one. Rose de Xinomavro origins shine since its tomato aromas intoxicate your nose from the first moment. On the palate, its Xinomavro true nature is more than obvious, with incredible structure, tannic substance, and crisp acidity.
ATMA White 2021
A series of experimental wines from special and original blends. What is original about ATMA White? His favorite Xinomavro, the leading Greek variety and the pride of Naoussa was vinified with the blanc de noir method and then it was blended with Malagouzia. Definitely not your everyday blend. Two completely different grape varieties with a completely divergent character meet and create a very promising blend.
Earth and Sky 2020
Earth and Sky by Thymiopoulos Vineyards was the Xinomavro that changed everything we knew about the red variety of Naoussa. With the modern version of Apostolis, you do not have to wait for decades for the tannins to soften. On the contrary, you cannot wait even a minute from the moment when Earth and Sky will be released to taste it! He is one of the very few that has managed to make Xinomavro one of the most cult, delicious and exotic wines that one can enjoy in the most important international wine lists!
