Why do we love it?

Villanueva 2023 by Comando G is unlike any Garnacha you’ve ever tasted. It bursts with umami, tart red berries, herbs, and floral notes, delivering a flavor profile that’s both unexpected and unforgettable. Its incredible complexity and unique character are yet another reminder of what we already knew: these guys know exactly what they’re doing. The scores from Parker (96 pts) and Suckling (95 pts) only confirm it.

The team at Comando G, pioneers in the revival of Spanish Garnacha, crafted this wine as a tribute to the wild beauty of Cebreros DO. The grapes come from over 60-year-old vines, deeply rooted in granite soils, absorbing the land’s minerality and the coolness of the high-altitude climate.

Harvested by hand, the winemaking process is all about minimal intervention: ambient yeast fermentation with whole clusters, in open oak vats, followed by a gentle 45-day maceration. The wine is then aged for 10 months in large French oak barrels and demijohns, and finally bottled unfiltered, preserving every nuance of its character.

With only 3,972 bottles produced, Villanueva 2023 is a rare gem for lovers of elegance and Garnacha.

Tastes Like

Villanueva 2023 offers a masterclass in finesse. The nose is ethereal, with aromas of cherry, blackberry, blood orange, strawberry, hibiscus, and violet, layered over a base of wet stone and subtle herbal tones. There’s a hint of spice, smoked meat, and black olive.

On the palate, it’s medium-bodied, with bright acidity and ripe yet firm tannins. This isn’t a wine that overwhelms with power—it captivates with depth and uniqueness.

Friends from college, Daniel Landi and Fernando Garcia decided to combine their passion for wine and search the Sierra de Gredos for small, inaccessible parcels and grow with the Garnacha variety. Vineyards aged 50 to 80 years, biodynamic cultivation, high altitude, manual harvest, oak barrels, foudres and amphorae. The result of all this is the production of sensational single vineyard wines from the Garnacha variety.

with Rosemary-crusted rack of lamb, braised chicken with olives, tomato and orange zest, or filet mignon with red wine and herb sauce.

Roast beef with spices and red wine sauce

  • 2 tbsps. of peppercorns
  • 2 tbsps. of black or white mustard seeds
  • 2 tbsps. of fennel seeds
  • 1.5 kilos of beef fillet
  • 2 tbsps extra virgin olive oil
  • 1 tbsp of wholegrain or English (preferably gluten-free) mustard
  • 3 coarsely chopped red onions along with the peels
  • A pinch of thyme

For the sauce:

 

  • 2 tbsps extra virgin olive oil
  • 1.5 with 2 tsps of corn flour
  • 2 beef stock cubes
  • 3-4 tbsp red currant jelly
  • 400ml red wine

Two days ago, grind the pepper and the mustard and fennel seeds using a mortar. Brush the fillet with mustard and then roll it to freshly ground pepper. Cover with cling film and place it in the fridge.

Two hours before you start cooking, take the meat out of the refrigerator to reach room temperature.

Preheat the oven to 180C. Heat the olive oil in a saucepan and cook the meat until it gets a beautiful brown color. Use onions in the casserole as the base and place the meat on top of them. Bake for 20 minutes for medium or 35 minutes for a well-done beef.

Remove the beef from the casserole and place it on a platter covered with foil for 30 minutes to keep it warm. Put the casserole on the heat and along with the onions and meat juices, add the corn flour and the beef stock cubes. Stir the jelly and gradually pour the wine while stirring. Simmer until the liquid is reduced. Strain the sauce and remove the onions. Slice the beef, flavor it with thyme and serve with the red wine sauce.
