Why do we love it?

Its name is strange. The variety is unknown. Natural vinification without sulphites. The label is teasing, almost revolutionary. Its production is only 400 bottles!

Dalamaras Winery, with talented Kostis Dalamaras leading, is known for its experimental and collectible vinifications that sell out in a blink and soon become legendary (see Triadique, Negosca etc.).

"Entre deux Greles" means "Between two Hails". Everybody calls it NG 14 or natural Negoska.

The unknown variety Negoska from one of the best spots of the «grand cru» area of Paliokalias, was harvested in adverse weather conditions, and selected berry by berry in a year almost catastrophic for the region of Naoussa. The precious must filled just one French oak barrel and remained there for 6 months.

It belongs to natural wines as it was vinified and bottled without the addition of sulfur at any stage of the process.

The guy on the label seems to be celebrating the arrival of the new lovely red wine by Dalamaras Winery, but also celebrates the success of creating a stunning wine against adverse weather conditions.

Tastes Like

Pale ruby color with purple hues.

Lovely nose full of fresh raspberries, strawberry, cherry, sour cherry and carob. Sweet spices, cinnamon, cloves, caramel and milk chocolate hints complete the aromatic profile.

Light mouth, fruity, with medium intensity, well worked tannins that fill the mouth and low alcohol that makes this wine enjoyable every moment. Raspberry, strawberry, cherry and cherry dominate the mouth and remain there in the long spicy aftertaste.

PAIR IT

Enjoy it on its own as an aperitif or accompany a duck in the oven, chicken with sweet-sour sauces or yellow cheese

Roasted duck

1 duck, about 3 kg
1 kg of potatoes, peeled, cut into large pieces 
4 onions, chopped
50g of duck fat
2 cloves garlic, finely chopped
1 tablespoon chopped sage
2 lemon zest

Preheat the oven to 220 ° C.

Season the duck with salt and pepper in the cavity.

Boil the potatoes in salted water until soft, then drain them well and mush them. Fry the onions in duck fat until they get a golden brown colour. Add the garlic to the potato puree and mix with sage, lemon zest and pepper. Put the mixture in the duck's cavity. Put the duck on a spacious baking tray in the middle of the oven. Bake for 30 minutes in 220 ° C.
Then, lower the temperature to 180 C or 160 C and roast the dusk for 2 ½ hours.
When the duck is cooked, remove it from the oven and leave it to rest for 15 minutes.
We recommend serving it with red cabbage and baked potatoes.
