Why do we love it?

Crete does not stop surprising us! In addition to the impressive still and sweet wines, it has started to make some extremely good sparkling wines like the Cassiopeia Dourakis Winery, from the rare grape variety Romeiko.

The history of the winery begins in the late 80's, when the renowned winemaker Andreas Dourakis decided to build his own winery, in Alikambos, Crete, in the greater area of Chania. The case is now a family affair, since his children, Evi and Antonis, also work in the winery, each in a different position but with impressive passion and dedication. This means that they never stop experimenting and exploring new aspects of the Cretan terroir. The constant experimentation, in combination with the love for the local varieties, gave birth to the unique sparkling wine Cassiopeia Dourakis Winery. The name is not accidental at all since Cassiopeia is a constellation in the northern part of the sky, named after Queen Cassiopeia, who was famous for her incomparable beauty. As you can imagine Cassiopeia Dourakis Winery has such an incomparable beauty since it is a sparkling wine made with the traditional method, from the very special reddish, Cretan variety Romeiko.

Tastes Like

Cassiopeia Dourakis Winery has medium lemon color and discreet bubbles. On the nose, it has elegant aromas of ripe fruits such as peach, lemon, bergamot and pear combined with notes of white flowers.

In the mouth it has medium (-) body, discreet acidity and gentle mousse. Peach, citron, pear, bergamot and tangerine are mixed with notes of dough, brioche and chamomile.

PAIR IT

Pair it prosciutto with melon, green salad with grilled manouri cheese and pear, roasted chicken

Quinoa salad with avocado and bell peppers

  • 1 cup quinoa
  • 2 cups of water
  • 1 cup of red and green bell peppers cut into cubes
  • 1/2 ripe avocado cut into thin slices
  • 2 tbsps. of onion finely chopped
  • 2 tbsps. of lemon juice
  • 2 tbsps. of fresh oregano
  • Salt
  • Black pepper
  • Balsamic cream

Boil the quinoa in a small pot and once the water boils, lower the heat and let simmer until it absorbs all the water (about 10 minutes).

Let the quinoa cool down.

Add all the ingredients except avocados to a bowl and mix well.

Garnish with 5-6 slices of avocado and serve with balsamic cream.
