Why do we love it?

If we were to recommend another sparkling wine with the same prestige as Champagne but at a fraction of the cost, it would definitely be a Cava. And Cava Castillo de Montblanc Brut Reserva is a cava that has it all! Super bubbles, autolytic aromas of brioche and croissants, festive mood and above all, amazing price.

Let's start things from the beginning. What is Cava? The Spanish version of sparkling wine produced in the same way as champagne but from different varieties. It is produced in many regions of Spain, mainly in Catalonia, with the traditional classical method that also produces champagne (methode champenoise). This method involves a second fermentation in the bottle and staying on the lees for at least 9 months in the case of Cava.

For Cava Castillo de Montblanc Brut Reserva the varieties used are the traditional Spanish Macabeu, Parellada, Xarel-lo. This is followed by slow fermentation in stainless steel tanks to preserve the fresh aromas that will pierce your nose. The best thing is that Cava Castillo de Montblanc Brut Reserva belongs to the Reserva category and remains not 15 months but 24 months in the bottle before being released.

Tastes Like

In the glass the color is lemony with golden highlights and small, intense bubbles. The bubbles, long and persistent. The nose is dominated by fresh aromas of citrus fruits, lemon, green apple and pear, while in the background, the aromas of the second fermentation, i.e. brioche, bread and dough, give complexity and a familiar feeling.

Mouth intense, full and lemony, with the acidity in perfect balance and a great long finish.

Pairs very well with beaufort souffle, linguine with sea urchin and lemon, oysters

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
