The well-known house Besserat de Bellefon was created in 1843 in the Grand Cru village of Ay. To understand the romance of this Champagne, you have to learn the story behind her. The house was called Besserat until Edmond Besserat, its owner, married Yvon Meric de Bellefon and her name has graced the title of the house ever since. Until today, having passed generations and generations from the cellars of Besserat de Bellefon, it has managed to keep its identity expressing the absolute connection of tradition with innovation, in perfect balance!

Besserat de Bellefon Champagne is produced from the classic varieties of Chardonnay, Pinot Noir, and Pinot Meunier and does not go through malolactic fermentation to preserve the purity of its aromas and its impressive effervescence. Each year is a blend of approximately 40 different batches until the personal style of cellar master Cedric Thiebault is achieved!

Pairs very well with french fries with truffle and parmezan, seafood platter

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
