Collectionneuse Sparkling Zin Ideos is made for pizza, parties, good company and summer. The irresistible combination of Xinomavro with the local Amassi grape, along with its tickling bubbles, creates a wine that bursts with aromas of strawberries, roses and peaches, finished with a playful touch of sweet tomato. Behind Collectionneuse Sparkling lies the Zin Ideos Estate, in Almopia, Pella — a family-run winery that has made a name for itself with little “gems” and wines that truly belong on the table. Its people have a deep love for indigenous varieties and are not afraid to take them one step further, and Collectionneuse Sparkling Zin Ideos is the ultimate proof of that philosophy.

Collectionneuse Sparkling is a sparkling rosé made from Amassi and Xinomavro, a pairing you rarely come across — and even more rarely in this style. Vinification is carried out with great attention to detail, using fermentation in closed tanks to preserve freshness, fruit purity and to create elegant bubbles. And they get it right.

Tastes Like

In the glass, it shows a delicate, bright rosé colour with fine, elegant bubbles. The nose is fresh and vibrant, with aromas of strawberry, cherry and blackberry, sweet tomato and subtle floral notes such as rose.

On the palate it has a light to medium body, crisp acidity and bubbles that are refined yet persistent. Juicy red and stone fruits mingle with tomato, herbs, flowers and a hint of doughy character, coming together in a thoroughly enjoyable whole.

PAIR IT

It drinks beautifully on its own as an aperitif, but pairs wonderfully with tuna tartare, prawns saganaki, pizza and fresh soft cheeses with tomato chutney.

Shrimps wrapped in prosciutto, with orange marmalade

  • 1/4 cup orange jam
  • 1/4 cup of white dry wine
  • 4 tsps. of fresh lemon juice
  • 1 tsps. of finely chopped ginger
  • 1 large clove of chopped garlic
  • 2 fresh onions finely chopped
  • 20 shrimp jumbo or medium-sized peeled (you can leave the tail)
  • 10 slices of prosciutto cut into half lengthwise
  • 2 tablespoons of vegetable oil
  • 10 wooden skewers dipped in water for 20 minutes
  • salt
  • pepper

In a medium bowl, mix the jam, white wine, lemon juice, ginger, garlic and onions. Add salt and pepper according to your taste.

Tosh the shrimps in the bowl and turn them to get fully covered with the mixture. Leave them for 20 minutes at room temperature. After 20 minutes, drain the shrimps from  the marinade.

Roll each shrimp with a slice of prosciutto. Put 2 shrimps in each skewer and carefully pierce prosciutto so that it doesn’t  get unfolded.

Preheat the grill to medium to high temperature. If we barbeque them, we are careful to roast them in a moderate fire. Dip the skewers in the marinade and bake until the prosciutto gets crispy and the shrimps opaque and slightly reddish, about 3 minutes on each side.

Secret:

Soak the wooden skewers in water (preferably hot) before putting them in the oven or the charcoal so that they won’t burn and tan while baking.
