Rosé Eau de Provence 2024, from the homonymous winery, is the latest premium rosé from the heart of Provence, infused with the spirit of Saint-Tropez and the refined aesthetic of the French Riviera. The bottle is minimalist and striking—resembling a high-end fragrance from a famous French fashion house. We won’t tell you which one… let’s see if you can guess. But enough about the bottle, because what’s inside is just as impressive. Expect a mineral-driven freshness and aromas of lemon blossom and freshly cut summer fruits to fill your glass—and your palate.

Eau de Provence winery made its debut in 2024, right in the heart of the AOP Côtes de Provence, just a few kilometers from the glamorous Saint-Tropez. With a deep respect for nature, it uses modern techniques to craft a rosé that’s truly “haute couture.” The blend includes Grenache Noir, Cinsault, Syrah, and Vermentino, each fermented separately to highlight the unique character of each grape. Night harvesting, limestone soils, and the dramatic day-to-night temperature shifts give the wine its lively acidity, aromatic complexity, mineral edge, and exemplary freshness—earning it the name Eau de Provence, or “the water of Provence.”

Production of the Rosé Eau de Provence 2024 follows sustainable practices from vineyard to bottling. The bottle itself is a statement of excellence—one of the lightest on the market at just 597 grams. Its label is made from 100% cotton, grown in Provence and woven without any chemical processing. Haute couture in name and in spirit!

The winery also partners with local artisans who collect plastic waste from the sea and transform it into valuable objects. And here’s a fun twist: the original plan was to use recycled colored glass for the bottles, but the public couldn’t resist the rare rosé hue of the wine—so, honoring consumer demand, they kept the signature clear bottle.

Tastes Like

On the nose, it offers delicate aromas of strawberry, peach, white flowers, and pink grapefruit. Notes of mandarin and cherry add complexity and underscore its elegance.

On the palate, it’s juicy, with crisp acidity and medium body. Red fruits lead the way, with hints of lemon, citrus zest, nectarine, and apricot creating a truly delightful experience.

Pair it with grilled shrimp, tuna ceviche, marinated salmon, or any kind of sashimi.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
