Julia Drouva, the very definition of the future of Greek wine, has taken over her family's winery and estate vineyards in Agios Georgios Pyrgos, Ilia, for the past few years.
She has now fully introduced us to her personal winemaking style — and not only have we embraced it, we’ve become absolutely obsessed with it.
Each year, she remains firmly committed to showcasing the value of her local vineyard and its unique varieties, but her curious and restless spirit always pushes her to experiment.
Ellie Rosé is the freshest, most modern evolution of the beloved Phoenix Rosé, and it’s also made from the rare variety Mavrofilero. Part of the broader Fileri family — and similar to its sibling, Moschofilero — Mavrofilero offers a deeper color and unique expression.
The grapes were hand-harvested at the perfect moment, and even during pressing, any mechanical intervention was kept to an absolute minimum. This time around, Julia opted for a gentle vinification approach, using almost no added sulfites.
