Foivos Papastratis is one of the youngest winemakers in Greece. He always had a great love for painting and from a young age he decided to study at the Fine Arts School. However, destiny was meant to be, since the oil seemed to catch on (his godfather is an oenologist) and Foivos finally got involved in enology. But even there his nature showed, since he is also an artist in wines. He bottled his first wine while he was still a student at the Department of Oenology, and his course in recent years has been brilliant. After his successful wines and bottlings with other winemakers, he traveled to Goumenissa this time. Chloe Hatzivaritis introduced him to the hidden secrets of Xinomavro and together they made a rose magic. Its careful vinification resulted in high acidity and rich structure, which fatally characterized it as the ultimate culinary rosé!
