Flevaris Rosé 2025 from Skoumpris Winery is a delightful paradox. Its name may evoke the dark days of February, yet in the glass it is unmistakably summery. Or perhaps that is precisely the point. A rosé that brings joy to your table, with its playful character, even in the heart of winter!

The family’s involvement with wine dates back to the 1950s, when Spyros Flevaris (hence the name of the wine) lovingly cultivated the family vineyards. Thirty years later, he passed his knowledge on to his nephew, Antonis Skoumpris, who gradually replanted the vineyards and began producing wines under his own name. Today, the helm is held by Spyros Skoumpris, creator of the Flevaris range, for which he has received recognition both in Greece and abroad.

Flevaris Rosé 2025 from Skoumpris Winery is a blend of Grenache Rouge and the -as local as it gets- Vradiano. The grapes come from privately owned vineyards in the Lilantio Valley of Evia, where the river and Mount Dirfys provide the ideal conditions for ripening, while preserving freshness and acidity. At the winery, a classic rosé vinification is followed, with fermentation in stainless steel tanks to retain its juicy character. The wine is then aged for 3 months on its fine lees, gaining an elegantly rounded texture and added complexity.

Tastes Like

On the nose, aromas of ripe strawberry, cherry and pink rose take centre stage, with subtle herbal nuances in the background.

On the palate, it is juicy and fruit-driven, with medium body and medium-plus acidity that balances beautifully with the wine’s delicate sweetness. Notes of cherry, raspberry and Turkish delight are present here as well, complemented by hints of white flowers.

Enjoy it on its own as an aperitif, with a pizza topped with spicy cured meats, or alongside a Thai pad thai.

 

Grilled sea bass with spicy soy sauce

  • 2 seabasses (500 grams each), with guts and scales removed
  • olive oil
  • salt and pepper
  • a handful of fresh herbs (rosemary, oregano)
  • 2 lemons or 1 orange
  • 10 g of fresh ginger in thin slices
  • Extra slices of lemon or lime for serving
  •  For the sauce
  • 2 tbsps. of olive oil
  • 2-3 cloves of garlic, finely chopped
  • 1/2 to 1 fresh hot pepper, in thin slices (depends on your preferences)
  • 1/2 cup soy sauce
  • 1/2 tsp. of sugar

Preheat your barbecue or light the charcoal. Gut the fish, remove the scales, and wipe it well. Make 3-4 vertical, to the bone incisions on each side of the fish. Brush the fish, in and out, with olive oil. Season with salt and pepper, in and out. Put in the fish's belly some fresh herbs and slices of lemon or orange. Put slices of ginger in the incisions you made earlier.

Place the fish in a baking pan. After the bbq is ready or after the grill has warmed up well, bake for 5-7 minutes and then turn it on the other side for another 5 minutes.

For the sauce, place a small saucepan on medium to high heat. Add the olive oil and when it's heated up, add the garlic and the chili peppers. Cook for 30 seconds. Add the soy sauce and sugar and allow to boil for 1 minute.

 Pour the sauce over the fish and serve with slices of lemon.
