Vin Doux du Soleil is a dessert wine and Evryviadis Sclavos has managed to capture in a bottle all the summers of Cephalonia! Read below and you will understand exactly what we mean.
Sclavos was one of the first to deal with biodynamic cultivation and natural winemaking. In all of his wines, he works abstractly and leaves the varieties to express both the terroir in which they grow and their character. Vin Doux du Soleil is such a bright example. The explosively fragrant Muscat of Cephalonia is allowed to dry under the hot Cephalonian sun. When the grapes are shriveled, they collect their super-concentrated juice, which is then fermented with ambient yeasts. The nectar ages for 12 months in French oak barrels and the result is simply intoxicating.

Deep golden color with amber hues and intoxicating aromas of dried apricot, orange, peach jam, lemon, bitter orange blossom, jasmine, and bergamot Turkish delight that are blended with hints of honey, vanilla, toast, and lotus.
