Why do we love it?

As you see it on the shelf, you think “what an elegant bottle”… Then you taste it and ask ecstatically which fantastic and super concentrated Provence this is, to get the astonishing answer that is not a Provence Rose but Liberte 2020 Jima Winery from Arta! No kidding, this happened in our offices when we tasted!

Panos Tzimas managed to create very good impressions with Rue du Soleil and that made us look forward to his next wine, which fortunately did not take long to come. Liberte 2020 is a rose wine dedicated to the 200 years since the Greek revolution. But beyond that, it is a deeply delicious wine that manages to combine the dense pure fruit with sour cherry-like acidity and buttery texture, with incredible elegance!

Liberte is made from 100% Merlot that comes from a vineyard a few kilometers away from the Amvrakikos gulf and so the soil is rich in clay, calcium, and marine fossils. The short maceration is responsible for its delicate color and the maturation with its fine wine lees is responsible for its creamy texture. It is bottled in only 500 super chic bottles and is ready to win you over!

Tastes Like

Liberte 2020 Jima Winery has pale pink color and elegant aromas of strawberry, cherry, raspberry, pink grapefruit, watermelon, cherry, tangerine peel, rose, dough, and icing sugar.

In the mouth, it has a rich body, creamy texture, and lemony acidity. Citrus fruits have the first role while notes of brioche, Turkish delight, strawberry, and peach follow.

with burrata with strawberries and prosciutto, salmon with orange, pasta napolitana, or shrimp risotto.

 

Spaghetti with shrimps, lemon and fennel

1 pack of spaghetti No6, whole-wheat
800 gr. shrimps
2 lemons
5-6 cloves of garlic
1 little bunch of fennel
ground pepper
sea salt
chili flakes
olive oil

Carefully peel and cut the shrimps’ heads. Place them in a pot with 300ml water and boil them, along with 3 cloves of garlic for 15 minutes. Then, filter the broth with a sieve, by pressing it well and keeping it warm.

At the same time, boil the spaghetti in salted water and cook them “al dente”. Take the lemon zest and chop the fennel.

In a large pan, pour 20 ml olive oil and the rest of the garlic. Once the olive oil is warm enough, remove the garlic and add the chili flakes.

Place the peeled, boiled shrimps in the hot pan and leave them for 1-2 minutes on each side. Season with salt and pepper, add a little fennel, a bit of lemon zest and pour in the lemon juice.

Remove the shrimps and in the same pan, place the spaghetti directly from the pot and increase the temperature. Add the broth you have prepared and mix well.

When the spaghetti have absorbed all the broth, sprinkle with fennel, pepper and the remaining zest. Serve the spaghetti with shrimp immediately.
