Why do we love it?

Pet Nat Vassaltis is by common consent one of the best, if not the best, Greek pet nat wine, with an unimaginable value for money. Every year it sells out faster and faster, leaving its hundreds of fans complaining about not getting a sip of it.

Vassaltis winery may be one of the newest wineries in Santorini but it never ceases to amaze us. With a name inspired by the black volcanic rock formed by the cooling of basaltic lava that covered the island of Santorini after the volcano erupted, almost 4,000 years ago, Vassaltis Winery has now proven that it can and does make great wines in any style and price. Pet Nat Vassaltis is one of them and as its name suggests it is a sparkling (petillant naturel), with elegance and grace. Its blend consists of Savvatiano and a dash of Athiri. The wine starts the fermentation in stainless steel tanks and before it is finished it is bottled. Thus, the produced dioxide is trapped in the wine and creates tiny bubbles. Due to the fact that the fermentation is completed in the bottle, the wine is not filtered and is therefore slightly cloudy.

Pet Nat Vassaltis is the ultimate aperitif.

Tastes Like

Pet Nat Vassaltis has pale lemon color and delightful aromas of melon, citron, peach, bergamot, dough and white flowers.

In the mouth it has medium body, subtle acidity and elegant mousse. Juicy and ripe yellow fruits and citrus mingle with notes of biscuit and honey.

Pairs with sushi, string bean salad with roasted peaches and ricotta, bruschetta with goat cheese and apricot chutney

Quinoa salad with avocado and bell peppers

  • 1 cup quinoa
  • 2 cups of water
  • 1 cup of red and green bell peppers cut into cubes
  • 1/2 ripe avocado cut into thin slices
  • 2 tbsps. of onion finely chopped
  • 2 tbsps. of lemon juice
  • 2 tbsps. of fresh oregano
  • Salt
  • Black pepper
  • Balsamic cream

Boil the quinoa in a small pot and once the water boils, lower the heat and let simmer until it absorbs all the water (about 10 minutes).

Let the quinoa cool down.

Add all the ingredients except avocados to a bowl and mix well.

Garnish with 5-6 slices of avocado and serve with balsamic cream.
