Why do we love it?
If you want to try a new, pleasant, floral and playful rosé, then Pink Pull by Karipidis winery is what you are looking for. You have surely heard of the Karipidis winery from its Sauvignon blanc, and not without reason! The Karipides family has been vinifying the international varieties in the Thessaly region with great mastery for years, having given the Greek wine scene serious examples of its potential. This time they decided to show us their delicate movements with the Italian variety Sangiovese, the robust red grape that makes great Italian wines. This, they tamed by transforming it into a sophisticated rosé without hiding the unruly side of the variety.

For the Pink Pull of 2023 Karipidis, the Sangiovese has been vinified as if it were a white variety, resulting in incredible finesse and complexity that you usually look for with a magnifying glass in rosés. Because if you take it now, you will definitely take it again, arrange that earlier.
Tastes Like

In the glass it has a light pink color with onion highlights that tempts, reminiscent of the well-known Provence rosés. Nose distinctive and fresh initially. Aromas of lychee, quince, orange zest, dried apricot.

Medium body, fatty, with fresh acidity and very good balance in the mouth.

Karipidis Estate
Karipidis Estate is located in Vounaina, Larissa, where Vounaina means small mountains. The year of foundation is 1985 but the relationship of the family with wine lasts more than a century! Karipidis Estate manages 300 acres of privately owned vineyard with mainly international varieties such as Chardonnay, Cabernet Sauvignon and Nebbiolo among others!

Pairs with pasta with seafood and spaghetti alle vongole

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
