Apostolos is always on the move, constantly seeking his next exciting wine adventure — those of us who know him, know this well! For years, he’s been exploring the world of sparkling wines, and when the opportunity arose to work in Zitsa, Greece’s oldest sparkling wine zone, he seized it. He invested in Domaine Glinavos and its high-altitude organic vineyards, seeing great potential in Debina. He kept the winery’s name as a tribute to Glinavos and its history but added his own signature both inside and outside the bottle.
Poeme de Nature Blanc is a blend of 75% Debina and 25% Blanc de Noir Xinomavro. After the first fermentation, the wine remains on its lees for 6 months, followed by another 2 months after the second fermentation in a sealed stainless-steel tank (Charmat method). The result is a sparkling wine with delicate bubbles, vibrant acidity, and a creamy texture that will impress — from beachside sipping to formal dinners.
