The soil there is ideal for producing high-quality grapes, and the vines are planted in a way that encourages good airflow and sun exposure. This allows the grapes to ripen without the threat of disease, while developing an ideal aromatic intensity. After the second fermentation, which takes place in sealed tanks, the wine remains on the lees for at least three months, gaining a more complex character.
