Why do we love it?
Surely by now, you are well aware of the rosé that has been described by great and famous wine judges as "the best rosé in the world". But even if you don't know (which we highly doubt) you definitely remember the label, which depicts two angels whispering discreetly. So this whisper in Rock Angel took the form of a hard rock tune and added another stone in the "Rosé Renaissance" of Provence! 91pts from James Suckling and Wine Enthusiast add the very next!
Sacha Lichine entered the list of innovative winemakers of Provence and the whole world when in 2006 he acquired the Chateau d'Esclans winery in the heart of Provence. Then he took a very courageous decision and wanted to do something completely innovative for the region, but also the image that the world had until then, of rosé wines and created Whispering Angel, marking the "rosé revolution", which now counts as a whole 16 years!
Caves d' Esclans operates as a negociant as well as a winery and every year it searches and finds the best grapes and the best vineyards of Provence that will end up producing the best rosé wines.
For Rock Angel, grapes from the Cinsault, Grenache, Rolle, Syrah, and Tibouren varieties are picked at their best stage of ripeness and placed in 10 kg cages so that they are not weighed down by gravity, while a portion of them are harvested in the night so that they are not stressed by the heat and sunshine of the day. Only those that meet very strict criteria of size, color and even shape end up in the winemaking stage!
The aromas remain highly attractive and result from the short stay of the free run juice in the barrel, but also the freshness of the percentage left in stainless tanks. But its strong point, which places it a step above Whispering Angel and makes it even more unbeatable, is its characteristic acidity and rich minerality. You will go crazy! 









Tastes Like
In the glass, it has a very subtle pink hue. Very elegant nose with aromas of white flowers mainly jasmine, acacia flower, freshly cut unripe strawberry, red berries, and raspberry, framed by a spicy note of white pepper.
In the mouth, it has a moderate (+) body and an obvious refreshing acidity, which perfectly balances its slightly fatty structure, due to the passage through a barrel and the use of batonnage. Red berries, raw almonds, and an intense minerality give a long-lasting delightful aftertaste.

Pair it with sushi, shellfish, seafood risotto, and spaghetti with smoked salmon.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
