Behind The Pale is the team of Whispering Angel, led by Sacha Lichine and, of course, Caves d’Esclans. Caves d’Esclans operates both as a négociant and a winery, selecting the finest grapes and top vineyard sites across Provence—beyond its own estates—to create The Pale Rosé by Sacha Lichine.

The Grenache, Cinsault, and Syrah varieties are cultivated in the Var region of Provence, near the Mediterranean coast. These three varieties come together in an exceptionally elegant and aromatic blend, featuring delicate aromas and a unique color.

The Pale Rosé by Sacha Lichine has a pale pink color and delicate aromas of strawberry, white cherry, raspberry, peach, lime, white flowers, apricot, and dough.

 Nestled in the heart of Provence, northeast of the glamorous St. Tropez, lies Château d’Esclans. Perched atop a hill, it overlooks the breathtaking Esclans Valley and the azure Mediterranean coast. The old vines and its privileged location were the foundation upon which Sacha Lichine envisioned creating the finest rosés in the world and igniting the “Rosé Renaissance”. Patrick Léon, an international winemaker with expertise at Château Mouton Rothschild and Opus One, joined Lichine in this monumental endeavour. They introduced innovative winemaking techniques to Provence, drawing inspiration from Burgundy, which revolutionised the rosé styles of the region. This transformative approach resulted in the creation of an extraordinary collection of rosé wines catering to diverse tastes and preferences, with Garrus, a rosé crafted from 100-year-old vines, serving as its flagship. Couscous salad with strawberries and goat cheese

For the salad

  • 100 g goat cheese
  • 150 grams of couscous with lemon and mint
  • 3-4 strawberries
  • 50 g baby spinach
  • 2 fresh onions
  • 2 tablespoons of almond shavings
  • 1 tbsp of pine nuts
  • ¼ bunch of coriander
  • 5-6 mint leaves 

For dressing

  • 3 strawberries
  • 2 tbsps. of white balsamic or apple vinegar
  • 3 tbsps. of olive oil
  • 2 tbsps. of water
  • 1 tbsp. of brown sugar
  • Freshly ground black pepper
  • Salt

Directions

In the food processor (multi), we blend all the ingredients for the dressing.

Prepare the couscous with mint and lemon, according to the packaging instructions, in a spacious bowl.

Roast the pine nut and almond and add half the amount to the couscous.

Chop onions, mint and coriander, add them to the couscous with the half of the dressing that we prepared and mix together.

If there is time, let the salad to "marinate" inside or outside the refrigerator.
