Why do we love it?

Vinsanto from Hatzidaki Winery is a velvety sweet wine from the native white varieties of the island Assyrtiko and Aidani, which capture Santorini's special volcanic soil uniquely!

Haridimos Hatzidakis was undoubtedly one of the greatest Greek wine producers. A wine genius with inexhaustible talent and vision who changed the logic of Greece's most important wine region, putting it in the most resounding way on the world map. His wines are almost collectible bottlings, while their relationship with time is always one of their strong cards...

For Vinsanto, 70% Assyrtiko and 30% Aidani, were harvested manually, from selected organic vineyards. The grapes had reached their highest stage of ripeness to naturally increase their sugars and aromas. They were then spread out to dry under the sun for about 5 days. They were dehydrated as needed to retain their juicy aromas at this stage. The thick broth that emerged after the pressing, fermented and remained for 7 whole years in French oak barrels to mature.

A rich and complex wine that you should not forget to put in the fridge for a long time. When it's cool it's even more exciting!

Tastes Like

In the glass, it has the color of amber. Intoxicating aromas of ripe apricot, dried fig, honey, honeycomb, nutmeg, cinnamon, sweet grape.

In the mouth, it is rich with a velvety texture. The lingering acidity of Assyrtiko balances the intense sweetness, giving a sense of freshness. Aromas of sweet fig, dried peach, grape jam, clove and coffee. Intense and long aftertaste.
