In the heart of Provence, in an idyllic chateau in the style of a Tuscan villa, is the Chateau d’ Esclans. Caves d’ Esclans operates as a negociant as well as a winery and every year it searches for and finds the best grapes and the best vineyards of Provence, beyond the privately owned ones, to create Whispering Angel. The Grenache, Cinsault, Syrah, Carignan, and Vermentino varieties come together in an extremely elegant and aromatic blend. Frequent batonnage gives volume, oiliness, and the characteristic aroma of strawberry cream.

 Nestled in the heart of Provence, northeast of the glamorous St. Tropez, lies Château d’Esclans. Perched atop a hill, it overlooks the breathtaking Esclans Valley and the azure Mediterranean coast. The old vines and its privileged location were the foundation upon which Sacha Lichine envisioned creating the finest rosés in the world and igniting the “Rosé Renaissance”. Patrick Léon, an international winemaker with expertise at Château Mouton Rothschild and Opus One, joined Lichine in this monumental endeavour. They introduced innovative winemaking techniques to Provence, drawing inspiration from Burgundy, which revolutionised the rosé styles of the region. This transformative approach resulted in the creation of an extraordinary collection of rosé wines catering to diverse tastes and preferences, with Garrus, a rosé crafted from 100-year-old vines, serving as its flagship. At the same time, the deafening success of Whispering Angel is the most enviable wine success story of the last 20 years.

Arugula salad with smoked salmon, avocado and roasted almond

  • 300 grams of arugula as fresh as possible
  • 200 g of smoked salmon
  • 50 g roasted almonds
  • an avocado, thickly cut
  • a little dill
  • a little fennel
  • 50 g of oil
  • 2 lemons
  • a little orange juice
  • salt
  • pepper
  • three types of peppercorns: green, red, black

Cut salmon in strips. Marinate for 3 hours in the refrigerator, in a bowl of lemon juice, finely chopped dill and fennel, pepper and a little olive oil. Mix by hand to combine all the ingredients.

Chop the roasted almonds.

Put the peppercorns in the mortar and break them lightly to release their aromas.

In a large salad bowl, cut the arugula in large pieces, add the avocado, pour over the salmon strips and sprinkle with pepper and roasted almond.

While serving, sprinkle with a dressing of: lemon, salt, a little orange juice and minimum olive oil, that we have previously mix well.
