Why do we love it?

X-mf Tselepos Winery is a very special wine that reaches Moschofilero to the extremes. Is it rose? Is it red? Is it orange? Well, let us tell you that it is a bit of everything and it is really incredible!

The name of Giannis Tselepos is associated with Mantineia and Moschofilero and as everything shows, his son, Aris, has inherited the same talent. In the range of the winery there were already two whites, one rosé and two sparkling wines from Moschofilero so another "recipe" had to be found. This is how X-Mf was born. The grapes come from a vineyard in Perpataria, at an altitude of 760 meters. Then they the whole bunches and the wine is fermented with ambient yeasts in stainless steel tanks, for the first 20 days. The fermentation of the wine continues in clay amphorae where after that, it matures for 6 months. Finally, no sulfites are added and the wine is bottled unfiltered. The result has a deep pink, marginally red color, with a character reminiscent of orange wine and is simply irresistible.

X-mf Tselepos Winery is bottled in about 1000 bottles so you know what to do.

Tastes Like

X-mf Tselepos Winery has deep pink color, with orange hues. On the nose it has explosive aromas of strawberry, cherry, rose, Turkish delight, orange, quince, bergamot and white tea.

In the mouth it has medium body, moderate (+) acidity and low tannins. Candied rose petals, sweet bergamot, roasted quince, persimmon, bitter orange, dried strawberry, fresh soil and herbs compose a special set.

Perfect pairing with stuffed tomatoes, lasagna with cheese in the oven, pork tenderloin with mango and prosciutto 

Fettuccine with spicy chicken, olives and feta

500g fettuccine 
600g chicken fillet
3 heirloom peppers
1 onion
2-3 cloves of garlic
100ml wine
50ml extra virgin olive oil
400g chopped tomatoes
150ml tomato juice
2 teaspoons chili flakes
1/2 teaspoon oregano
1/2 teaspoon thyme
1 teaspoon dried basil
1/2 teaspoon dried parsley
1 teaspoon smoked paprika
1 teaspoon sugar
250 gr. spicy Feta cheese
100 gr. green and black olives (pitted)
Freshly ground pepper
Salt

In a large frying pan, sauté the chicken with some of the olive oil until it gets a nice even color. After that, add the onion, garlic and peppers.

Add the dried herbs and pour in the wine. Once evaporated, add the sugar, tomatoes, tomato juice and the rest of the olive oil.

Simmer until the sauce thickens and finally add the olives, feta and remove from the fire.

In a large saucepan, boil 5 liters of water, add 35g of salt and boil the fettuccine for 8-11 minutes.

Serve the fettuccine on a plate, add the spicy chicken on top and finely chopped basil and parsley.
