Why do we love it?

Super Estrella Rosado 2024 by Roberto Henríquez is the rosé you need to taste this year. With fresh red fruit, explosive floral aromas and crisp acidity, it reveals in the most attractive way the unique winemaking philosophy of Roberto Henríquez: tradition and a modern, low‑intervention approach, perfectly tied together in an utterly enjoyable rosé wine. What makes it even better is that we’re talking about a true all‑rounder, since it can easily pair with almost anything. It’s the wine you’ve been looking for for those tables filled with many different dishes, from meze and seafood to pizza and Asian food!

In 2015, Roberto Henríquez returned to his birthplace, Bio Bio, after studying viticulture and oenology and working in wineries in South Africa, Canada and France. There he decided to dedicate himself to reviving old varieties and the traditional techniques used by previous generations. In the historic region of Itata, where vineyards are farmed without irrigation and in the same way for centuries, Henríquez works with such passion that his work resembles a mission more than a profession. It is no coincidence that he is now considered one of the most important representatives of the new generation of producers in Chile.

Super Estrella Rosado 2024 by Roberto Henríquez includes the varieties Moscatel Rosado and Cinsault, coming from 100‑year‑old vineyards in Itata. The grapes are hand‑picked and then Moscatel stays for a few hours in contact with the skins to enhance its aromatic intensity, while Cinsault is pressed directly to avoid extracting harsh tannins that do not suit the rosé style.

Fermentation takes place with ambient yeasts in stainless‑steel tanks, and afterwards the wine matures for 1 year in old barrels, aiming to give it structure and character without loading it with oak aromas!

Super Estrella Rosado 2024 by Roberto Henríquez is a super‑gastronomic rosé wine, bottled without filtration and expected to gain loyal fans!

PAIR IT

Try it with spicy arrabbiata, pizza and shrimp saganaki.

Rooster Pastitsada (spicy tomato sauce)

1 kg of rooster, cut into portions

500 gr. spaghetti (ideally no. 2)

1 clove of garlic

2 large onions

2 tbsps. white wine vinegar

200 ml. red wine

1 tbsp. of sugar

1 tbsp. of butter

2 tbsps. of tomato paste

150 gr. tomato sauce

2 bay leaves

1 cinnamon stick

3-4 all spices

Olive oil

Freshly ground black pepper

Salt

Wash the rooster and dry it with absorbent paper. Heat up the olive oil in a frying pan, brown the pieces of the rooster well on all sides and transfer them to a wide, deep pot.

In the pan (with the olive oil) we used before, add the butter, garlic and onions after chopping them. We saute them until they soften, and then add the vinegar. Then return the meat into the pot.

Put the pot in high heat and pour in the wine. Leave for a few minutes to evaporate and then add the spices, sugar, pepper and salt. Finally add the tomato paste dissolved in a cup of hot water.

Lower the heat and let simmer until the meat softens and the sauce is thick.

Check regularly to have enough sauce and add extra hot water if necessary.

When the rooster is tender, boil the spaghetti in another pot.

Remove the meat from the saucepan and place it on a serving platter. Put the spaghetti in the sauce and mix well to absorb the juices.

Serve the spaghetti with the meat and if you want, sprinkle with a little cinnamon and grated cheese.
