The Aged Wine Distillate by Parparoussis Winery is a special and rare wine distillate (eau de vie) from the Sideritis grape variety. It manages to combine uniquely the delicate aromas of the variety with the notes of oak.
Parparoussis Winery is known for its complex and impressive wines based mainly on local grape varieties. Sideritis is one of them and in fact, Parparoussis Winery was among the first to deal with it. Suffice to say that the first time they released their single-varietal Sideritis wine was in 1980! They know, as you understand, the variety and its possibilities very well. So, they decided to proceed with a wine distillate from Sideritis, the Aged Wine Distillate by Parparoussis Winery. Distillation is done in Charentais Ambix and they only use the "heart" of it. The distillate is then aged in French Limousin oak barrels for 12 months. The result is complex, with a spicy and smoky character.

Aged Wine Distillate by Parparoussis Winery has an amber color and impressive aromas of vanilla, tobacco, cinnamon, toffee, honey, raisins, orange, dried apricot, and coffee. In the mouth, it has a rich body with balanced sweetness and aromas of peach, bitter orange, honeycomb, vanilla, cinnamon, oak, smoke, and toffee.
