This could be another single malt distillery from Glenallachie, located on the Speyside of Aberlour and founded in 1967 with the sole purpose of continuing to create mainly blended whiskies. It is a masterpiece produced to bring out the highlight, that choosing the right casks in whiskey is nothing short of art.
We are of course talking about Billy Walker and his skill in choosing the right casks in which to age every whiskey. Each of these gives very different aromas and characteristics to the spirits of GlenAllachie since each type of wood affects the spirit differently. GlenAllachie 2009 14 YO Batch 6 Sauternes Single Cask #3717, distilled in 2009 and bottled in 2023. These 14-year-old in very specific barriques was selected by Billy himself, from the Bordeaux region. These previously housed the sweet Sauternes wine, giving the whiskeys unique elegant aromas and volume.
Only 302 bottles of this nectar were bottled and if you know even a little about the magical world of whisky, this is a must-try.
In the glass, it is bright gold. Aromas of sweet pear, dark chocolate, apple pie, honey, and coconut sugar. In the mouth the former use of the barrel for Sauternes is clear. Exuberant with flavors of apricot, honey, dark chocolate, cinnamon, coffee, and ginger.
