Why do we love it?

Filtration is the process in which the wine passes through membranes and other type of filters in order any particulates and remaining yeast to be removed.  A number of wine producers, mainly of red wines, avoid the method of filtration because it may remove, or make weak some of the organoleptic characteristics of the wine. In very rare cases, the same could be happened in the white wines.

The wine of  Domaine Papargyriou –production 2012 -may be the only unfiltered white wine in Greece, at the moment. An experimental white blend of Sauvignon Blanc and Assyrtiko, which was ageing four months in French oak barrels and was bottled unfiltered and without stabilization, in order to incorporate as much of the aromas and flavors of the two varieties. Having an impressive concentration of aromas and flavors with a possible presence of sentiments, the “Uunfiltered 2012” of Papargyriou Domaine  has been produced in limited quantity and is a white wine that can accompany grilled meats and dishes that normally would not served with white wines.

Tastes Like

The color is golden yellow with orange accents!  Any presence of sediments is expected since the wine is not filtered and stabilized, but this is not a defect.

The aromas strong floral aromas of lemon and sweet hyacinth, are supplemented by those of peach jam, vanilla and white pepper.


In the mouth,  the body is full and rich, and the initial sweetness of alcohol is blend perfectly with the distinct acidity giving the feeling of complete balance.  The intense aromas are revealed gradually while the long aftertaste leaves the intense sense of peach in the mouth.
