Why do we love it?

Afoura 2022 by Anhydrous Winery is a striking expression of Santorini’s volcanic terroir at its finest. This wine is part of Apostolos Mountrichas’ second winemaking project on the island and comes from own-rooted vines, trained in traditional kouloura baskets in the Pyrgos area, grown under the island’s harshly dry climatic conditions.

The wine was aged for a full 12 months in traditional 1,000-liter oak barrels known as Afoures, historically reserved for Santorini’s finest wines. This aging process lends depth, structure, and layered complexity, resulting in a wine that captures the grandeur and soul of the island.

Tastes Like

Afoura 2022 is aromatically complex, with notes of lemon, lime, roasted nuts, and the minerality of wet stones.


On the palate, it is full-bodied, with high acidity and a dense, textured mouthfeel. Flavors of honey, lemon oil, quince, and vanilla intertwine with hints of hazelnut and a distinctive mineral backbone.

PAIR IT

Pair it with large charcoal-grilled fish, oven-roasted lamb, lobster giouvetsi, or smoked and creamy cheeses.

Lamb with honey and rosemary

  • 4 racks of lamb with 3 lamb chops each

for the marinade:

  • 2 tbsp chopped rosemary
  • 3 tbsp honey
  • 2 cloves of garlic, finely chopped
  • 125ml red wine

Marinade: Mix rosemary, honey, garlic and wine in a large bowl. Put the racks in and cover them with the marinade. Marinate for 10 '

Drain the racks and put them in a baking pan that has been brushed with oil. Bake for 20 minutes, or according to your preference, in a preheated oven in 200 degrees (Celsius).
