The Gavalas family has been devoted exclusively to the island’s indigenous grape varieties since the late 19th century, playing a vital role in preserving and showcasing vineyards that are a true part of Santorini’s winemaking heritage.
Gavalas Aidani 2023 comes from vineyards over 50 years old in Akrotiri. Unlike the more austere and razor-sharp Assyrtiko, Aidani is renowned for its aromatic character and its more approachable, user-friendly style. Fermentation takes place in stainless steel tanks, where the wine remains on its fine lees for around four months, gaining additional depth and complexity.
And because production is limited, it usually disappears far more quickly than fans of the variety would like.
