Why do we love it?

Albillo Mayor 2023 from Bendito Destino is a generous white wine that showcases the rare Spanish grape Albillo Mayor, native to Ribera del Duero. Its destiny seemed written from the moment it caught the attention of Terry Kandylis. With finesse, complexity and a structure reminiscent of fine white Burgundy, this wine was made to steal the spotlight.

In the heart of Ribera del Duero, among century-old vines, Bendito Destino — “Blessed Destiny” — was born. In 2020, award-winning sommelier Terry Kandylis, en route to the Canary Islands, made a stop in the village of Canalejas de Peñafiel that would change his life forever. At an altitude of 925 metres, he saw the opportunity to breathe new life into abandoned vineyards and craft wines with a unique identity. With the help of Secundino, the village’s oldest vine grower, he revived Spanish tradition using sustainable viticulture and winemaking techniques. Today, Bendito Destino is considered one of Spain’s most exciting wine projects, expressing the greatness of the local terroir through rare, limited-edition bottles.

Albillo Mayor 2023 Bendito Destino is made from grapes sourced from four century-old vineyards in the region. For this wine, Terry Kandylis applied techniques he learned from top Burgundy winemakers, whom he had closely studied. The grapes are first foot-stomped in the traditional way, followed by gentle basket pressing. Fermentation takes place with ambient yeasts in 500L François Frères oak barrels. The wine then rests for around seven months on its fine lees, gaining richness, texture and complexity.

With just 1,281 bottles released worldwide, Albillo Mayor 2023 from Bendito Destino is truly a collector’s wine. Don’t miss the chance to taste it!

Tastes Like

Expect aromas of orange blossom and acacia, chamomile, ripe pear, white peach, bergamot and orange zest, accompanied by hazelnut, brioche, toast and nutmeg.

On the palate, it’s full-bodied with a creamy texture and balanced acidity, reminiscent of great white Burgundies. Flavours of dried citrus peel, pear, peach, sweet apple, hazelnut and biscuit.

Pair it with sautéed scallops in butter and herbs, pork fillet in white mushroom sauce, or soft cow’s milk cheeses like Brie and Morbier.

Chicken with lemon and macaroni

250g wholemeal macaroni
1200 gr. chicken drumsticks
1 onion, finely chopped
3 cloves garlic, sliced
2 carrots, diced
2 leeks, coarsely chopped
1 teaspoon thyme, finely chopped
50ml lemon juice
1100ml hot chicken broth
80ml olive oil
4 allspice berries
1 cinnamon stick
1 bay leaf
Freshly ground pepper
Salt

First of all, season the chicken with salt and pepper. In a deep frying pan or casserole, put 40ml olive oil and sauté the chicken on all sides until it gets a light golden color. Add the onion, carrots, garlic, and leeks and sauté for another 2 '. Add the spices, the bay leaf, the thyme, the lemon juice, 500ml of the broth, salt, pepper and cook for 25 'on a medium heat.

Preheat the oven to 180o C.

Take the chicken out of the pot and keep it warm. Transfer the contents of the pot to a fireproof pan and add the Wholemeal macaroni, the rest of the broth, olive oil, pepper and salt as desired. Stir and bake for 20 'at 180o C. Then take the pan out of the oven, stir, add the chicken and cook for another 10 'at 180o C.

Serve it while hot with chopped parsley and parmesan if you like.
