Why do we love it?
Santorini Alcyone Cuvee Mythologique - Vassaltis Vineyards is from the Santorini wines that once you taste it, it will be simply unforgettable. Complexity and balance, which will be hard to beat. The minerality and acidity of Assyrtikos, tamed by the exuberant and round character of the barrel, into a distinct wine of many honors.
 
Vassaltis Winery of Yiannis Valambous is one of the jewels of Santorini, which in its relatively short history has already produced excellent examples and has now established itself among the best on the island, and on the planet. Alcyone is essentially the replacement of the Assyrtiko in the barrel that was bottled until now. The choice of the name was not accidental at all, since it suggests that if the barrel is used properly, it can uniquely embrace the harsh characteristics of the variety. The grapes were harvested, as expected, by hand, from the vineyards of Pyrgos, Megalochori, and Vourvoulos. Whole bunches were pressed and then fermented in very specific oak barrels, where they remained in contact with the lees for 4 months. The bottles, which are available in a limited number shown on the label, were left to rest for 7 months in the winery's cellar.

Tastes Like
It has a soft lemon color with greenish highlights. On the nose, it has strong aromas of lemon, orange peel, vanilla, brioche, and sea minerality.
 
In the mouth, it is complex, with an exuberant body and crisp acidity. Lemon, grapefruit, and citrus, on a flint background. The elegant sense of honey adds complexity and gives way to a salty and long-lasting aftertaste.

Vassaltis Vineyards
Vassaltis Vineyards is the newest winery in Santorini and was created by the youngest producers and is located in Vourvoulos area on the road to Oia. A name inspired by the black volcanic rock formed by the cooling of the vassaltic lava that covered the island of Santorini, the winery is now ready to produce great wines and carve out its own history.

PAIR IT

Pair it with grilled fish, lemonade pork, and chicken with white fatty sauce.

Grilled sea bass with spicy soy sauce

  • 2 seabasses (500 grams each), with guts and scales removed
  • olive oil
  • salt and pepper
  • a handful of fresh herbs (rosemary, oregano)
  • 2 lemons or 1 orange
  • 10 g of fresh ginger in thin slices
  • Extra slices of lemon or lime for serving
  •  For the sauce
  • 2 tbsps. of olive oil
  • 2-3 cloves of garlic, finely chopped
  • 1/2 to 1 fresh hot pepper, in thin slices (depends on your preferences)
  • 1/2 cup soy sauce
  • 1/2 tsp. of sugar

Preheat your barbecue or light the charcoal. Gut the fish, remove the scales, and wipe it well. Make 3-4 vertical, to the bone incisions on each side of the fish. Brush the fish, in and out, with olive oil. Season with salt and pepper, in and out. Put in the fish's belly some fresh herbs and slices of lemon or orange. Put slices of ginger in the incisions you made earlier.

Place the fish in a baking pan. After the bbq is ready or after the grill has warmed up well, bake for 5-7 minutes and then turn it on the other side for another 5 minutes.

For the sauce, place a small saucepan on medium to high heat. Add the olive oil and when it's heated up, add the garlic and the chili peppers. Cook for 30 seconds. Add the soy sauce and sugar and allow to boil for 1 minute.

 Pour the sauce over the fish and serve with slices of lemon.
