Why do we love it?

After Agiorgitiko, where they excel, they decided to deal with Assyrtiko and as you can well imagine, Assyrtiko Aivalis Winery is amazing. Exuberant, with oaky character and oily texture, it will win you over from the first sip!

Sotiris Aivalis, under the watchful eye of his father, Christos, has begun to experiment with new varieties and techniques and as everything shows, the talent in winemaking is something that flows through the veins of the family. After studying in the Mecca of wine, Burgundy, Sotiris shows that he is ready for great things.

Undoubtedly, Assyrtiko is the greatest white Greek grape variety, so he decided it was time to deal with it. A vineyard in Pera Meria, planted with Assyrtiko, was the basis for the winery's new wine. Sotiris wanted to make a rich and intense wine that could accompany difficult and complex dishes. So, he chose to macerate the must with the skins for 24 hours. This gave aromas and structure to the wine, which was fermented and matured in used oak barrels, for 8 months. The result has the spicy and smoky character of the barrel combined with the rich fruit and the crisp acidity.

Assyrtiko Aivalis Winery, buttery and intense, is made for great gastronomic experiences.

Tastes Like

Assyrtiko Aivalis Winery has medium lemon color and intense aromas of lemon, bergamot, peach, pear, vanilla, butter, honey, acacia, hazelnut, and smoke.

In the mouth, it has medium (+) body, balanced acidity, and oily mouthfeel. Juicy citron, grapefruit, unripe peach, lemon, butter, smoke, toast, vanilla, and caramel fill up the palate in every sip.

PAIR IT

with Spaghetti Carbonara or chicken dishes.

Carbonara

  • ½ kg spaghetti
  • 4 large fresh eggs
  • 250 gr Guanciale chopped into cubes
  • 1/2 cup freshly grated Parmigiano Reggiano cheese
  • 1/2 cup freshly grated pecorino
  • Freshly ground black pepper
  • Salt

Put 3 liters of well-salted water in a pot and let it boil. When it starts boiling add the pasta and cook for 8-10 minutes, until they become al dente.

While the pasta is boiling, heat a large pan on medium heat. With very little olive oil (half a tablespoon), sauté pancetta or bacon for about 3 minutes, or until crisp. Then turn off the heat.

In a small bowl, mix the eggs and the cheeses until they are well mixed.

When the pasta is ready, take 1/2 cup of the pasta water and drain the rest.

Turn on the heat, in moderate temperature, and put the pan with the bacon on. Add the water from the spaghetti. Put the spaghetti in the pan and mix by shaking the pan over the fire for a few seconds until the most of the water evaporates.

Remove the pan from the heat and add the egg mixture and mix quickly until the eggs are tightened. The eggs will be cooked by the remaining heat. If the sauce looks too thick, add some more of the pasta water.

Sprinkle with freshly ground black pepper and serve immediately!
