Artemis’ latest “baby” is Arktos Elevation Vineyards in Amyntaio, where he crafts wines with total dedication—wines that authentically reflect both the grape and the place they come from.

Assyrtiko 2024 Arktos Elevation Vineyards comes from vineyards perched at 650–700 meters above sea level, on the slopes of Xino Nero and Agios Panteleimonas. It captures the cool, mountainous character of Amyntaio with remarkable precision. Fermentation takes place exclusively in stainless steel tanks to preserve its hallmark acidity and vibrancy, and the wine rests on its lees for about 7 months. A small portion is aged in old oak barrels, adding subtle depth and complexity—showcasing the winemaker’s finesse with the variety and proving that yes, this is his strong suit!

Tastes Like

The nose is clean and expressive, with intense aromas of lemon, lime, citrus zest, white peach, grapefruit, green apple, and lemon blossom—all wrapped in delicate minerality and hints of toasted bread.

On the palate, it’s medium-bodied with sharp acidity that brings energy and tension. Bright lemony freshness and mineral notes dominate from the first sip. Juicy lime, citron, grapefruit, underripe peach, and green apple amplify the freshness, while notes of wet stone, sourdough, and toast fill the mouth in every sip.

ASSYRTIKO 2024 - ARKTOS ELEVATION VINEYARDS

Pair it with all kinds of shellfish, octopus carpaccio, white fish ceviche, or grilled sea bream.

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
