Xinomavro Blanc de Noir from Tasionas Winery is one of those little gems you stumble upon by chance and then wonder how you didnt know it sooner. Its a wine that proves that when the winemaker has inspiration, boldness, and a playful spirit, they can tame a grape variety with such a strong personality and transform it into something unexpectedly refined. We tasted it, it surprised us, and now its time for you to discover it too.

Tasionas Winery, in Ramnista Giannakohori just outside Naoussa, continues a family tradition that dates back to the late 19th century. With 50 acres of vineyards in the historic terroir of Giannakohori, the 6th generation of the family now cultivates exclusively Xinomavro, expressing it through three single‑varietal labels. Nikolaos Tasionas, known for his obsession with detail and his love for the old vineyards of Macedonia, identified the ideal plot to experiment with Xinomavro and create a white expression of it.

For Xinomavro Blanc de Noir from Tasionas Winery, the juice ferments with indigenous yeasts in stainless‑steel tanks, preserving the purity of the fruit and the unique character of the variety. The result is a small revolution against the robust red image of Xinomavro, proving that the grape can shine just as brightly in its white form.

Tastes Like

 

 On the nose, Xinomavro Blanc de Noir from Tasionas Winery shows expressive aromas of white peach, bergamot, citron, white rose, and lemon blossom, wrapped in subtle hints of tomato leaf and herbs.

On the palate, it has a medium body and refreshing acidity. White peach, green apple, rose, bergamot, and lemon blossom fill the mouth with every sip.

Enjoy it with stuffed vine leaves (dolmadakia), grilled shrimp with lemon and herbs, or over roasted chicken.

Stuffed veggies with couscous

For stuffing
- 250 g couscous
- 3 fresh onions
- 1 dry onion
- 2 cloves of garlic
- 1 small bunch of parsley
- 2 tablespoons of black currants
- 2 tablespoons pine nuts
- 40 ml. olive oil
- 150 ml. tomato juice
- Freshly ground pepper
- Salt

You will also need:
- 4 tomatoes
- 4 zucchinis
- 4 green peppers
- 60 ml. olive oil
- 100 ml. tomato juice
- Freshly ground pepper
- Salt

Cut and remove the lids from the veggies and empty the interior.

In a large bowl, finely chop tomatoes, parsley, onions and garlic. Add tomato juice, pine nut, raisins, salt, pepper and 40 ml. olive oil, mix and add the couscous and 50 ml. water.

Stuff the vegetables and place them in a large saucepan next to each other. In a bowl, mix 60 ml. olive oil, 100 ml. tomato juice, 150 ml. water, salt-pepper and pour over the veggies.

Place the saucepan on medium heat, for 3-4 minutes and then simmer for about 35 minutes, until the vegetables are softened or when the juices run out. Let cool and serve or you can eat it cold.

Notes
- You can add in the pot and a couple of potatoes cut into chunks.
- You can make it in the oven too.
- Pine nuts and raisins can be omitted.
