Domaine Billaud-Simon was founded in 1815 by Charles Louis Noël Billaud, who purchased some of the finest vineyards in the Chablis region. After 200 years of family ownership, the estate passed into the hands of the famous Faiveley family in 2015, one of the most significant producers in Burgundy. Today, the head of winemaking is Olivier Bailly, who has been at the helm since 2014, faithfully continuing the tradition with a focus on terroir and the freshness that defines the uniqueness of Chablis. And it’s no wonder—especially when you consider that the estate boasts 18 hectares of vineyards, including 4 Premier Cru and 4 Grand Cru!

The winemaking of the 2023 Chablis begins with the slow ripening of the grapes. The wine is fermented with native yeasts in stainless steel tanks to preserve the fresh fruit and crisp acidity, which are the signature characteristics of Chablis wines. The lees aging results in an explosion of purity and minerality, capturing the essence of the Kimmeridgian soil. It’s a wine so enjoyable, it represents the flagship of Domaine Billaud-Simon.

Tastes Like

In the glass, it’s a soft lemony color. Rich aromas of peach, green apple, banana, lemon zest, lime, citron, unripe pear, all framed by notes of minerality.

On the palate, it has a medium body and vibrant acidity, with a balance of freshness and elegance. Flavors of lemon and lemon zest intertwine with peach and green apple, while hints of vanilla and the region’s signature minerality add depth and uniqueness. The finish is delicately salty, with great length.

CHABLIS 2023 - DOMAINE BILLAUD SIMON

PAIR IT

Pair it with steamed mussels and quinces, clams with risotto, and sautéed shrimp

 

Steamed mussels with white wine and black pepper

  • 1 kg mussels, whole (with shell) cleaned and scraped. Alternatively prefer frozen
  • Freshly ground black pepper
  • 1 clove of garlic chopped
  • 3 tbsps. of finely chopped fresh parsley
  • 1 glass of white wine, preferably Assyrtiko

Place the mussels without water in a large saucepan or pan on a high heat and add plenty of pepper. Cook for about 5 minutes until they open. Throw away mussels that will remain closed. Pour in the wine and leave it for a 1 minute in the heat until the excess of liquids is reduced.

Drain the mussels and hold the liquid left in the pan. Place the mussels in a deep platter. Drain the liquors from the mussels and pass them through a cheesecloth and then put them in a small bowl. Add the parsley to the bowl, stir, pour the mixture over the mussels, and serve.
