If you’re looking to experience the authentic taste of Chablis, from a producer who creates some of the region’s most aristocratic whites, then you’re in luck. We’ve just received the 2023 Chablis from Domaine Billaud-Simon. A burst of freshness and minerality introduces you to the Kimmeridgian soil in a highly expressive way, with an outstanding quality-price ratio!
Domaine Billaud-Simon was founded in 1815 by Charles Louis Noël Billaud, who purchased some of the finest vineyards in the Chablis region. After 200 years of family ownership, the estate passed into the hands of the famous Faiveley family in 2015, one of the most significant producers in Burgundy. Today, the head of winemaking is Olivier Bailly, who has been at the helm since 2014, faithfully continuing the tradition with a focus on terroir and the freshness that defines the uniqueness of Chablis. And it’s no wonder—especially when you consider that the estate boasts 18 hectares of vineyards, including 4 Premier Cru and 4 Grand Cru!
The winemaking of the 2023 Chablis begins with the slow ripening of the grapes. The wine is fermented with native yeasts in stainless steel tanks to preserve the fresh fruit and crisp acidity, which are the signature characteristics of Chablis wines. The lees aging results in an explosion of purity and minerality, capturing the essence of the Kimmeridgian soil. It’s a wine so enjoyable, it represents the flagship of Domaine Billaud-Simon.
Are you a fan of Chablis? You’ll love this one. Haven’t tried any yet? Consider yourself lucky to start with the 2023 Chablis from Domaine Billaud-Simon—it’ll make you fall in love with the style!
