Why do we love it?
Chardonnay Barrique Domaine Florian is a classic oak-aged Chardonnay for those who love intense and buttery white wines. It has an enviable intensity and complexity that can handle bold, fatty, and rich dishes.

Domaine Florian is located in Epanomi, Thessaloniki and its vineyards are located just a few meters from the coastline. This is of utmost importance as it provides the ideal conditions for the perfect ripening of the grapes. Schneider family fell in love with Greece and decided to build their own winery here and not in Germany, where they come from. Florian, the eldest son of the family, after his studies in Oenology, has taken the reins of the winery next to his father. Since he has a weakness for French varieties, he decided to experiment with creating the Chardonnay Barrique. Chardonnay ferments in a 300-liter French oak barrel and matures there for another 6 months. The result is definitely impressive as it manages to perfectly balance the exuberant barrel with the juicy fruit, giving explosive aromas of ripe fruit, butterscotch, and smoke.

Tastes Like
Chardonnay Barrique Domaine Florian has a medium golden color and intense aromas of vanilla, toast, caramel, honeycomb, smoke, bergamot, peach, lemon, caramelized pear, and grapefruit.

In the mouth, it has a medium (+) body, balanced acidity, and an oily mouthfeel. Ripe apricot, peach, lemon, citron, vanilla, smoke, butter, honey, and hazelnut fill-up the mouth in every sip.

PAIR IT

with linguine with smoked salmon, cream, and dill, smoked pancetta with honey-mustard icing, or mushroom risotto with toasted hazelnut.

Salad with smoked trout, green apple and herbs

For the salad
1 pack of mixed lola and arugula salad
1 fillet of smoked trout
1 green apple
1 finocchio
3 radishes
3-4 walnuts
trout eggs, optional

For dressing
2 green onions
15 gr dill
10 g fennel
1 clove of garlic
20 ml. vinegar of white wine
1 lemon
40 ml. olive oil
Freshly ground pepper
Coarse salt

Prepare the dressing: In a food processor (multi), mix all the ingredients for the dressing, by adding the olive oil in the end, while tasting and seasoning.


Finely chop the finocchio, chunk the green apple and the two radishes, put them in a bowl and add half the quantity of trout fillet, which you have crumbled with your hands.


Pour half the amount of dressing, mix and place the fish salad in the fridge. Cut the other radish into thin slices and place the salad in a serving bowl and sprinkle with the dressing.


Add the already prepared fish salad, the remaining tout fillet, the radishes, the walnuts and the trout eggs. We garnish with plenty of dressing and serve.

Notes:
- Instead of smoked trout you can use any other smoked fish
- In the salad you can add orange
