Why do we love it?

Chardonnay En Barbi Arbois 2022 from Domaine du Pélican is without doubt one of the finest and most representative examples of Chardonnay from Jura. Why? Because it combines the distinctive character of the region and the grape variety, crafted by none other than one of Burgundy’s great winemakers—Guillaume d’Angerville! You can probably already imagine what a stunning wine this is but read on to be sure before adding it to your basket (if you haven’t already).

Domaine du Pélican is located in Montigny-les-Arsures, just a kilometer outside Arbois, and was founded in 2012. Arbois is one of Jura’s most important appellations, producing wines that send shivers down the spine of any serious wine lover. Behind Domaine du Pélican are François Duvivier and Guillaume d’Angerville of the famed Domaine Marquis d’Angerville in Burgundy. In 2007, Guillaume tasted a Chardonnay from Arbois (by Tissot) and fell head over heels for the region’s potential. That moment sparked his decision to invest in Jura’s terroir and help bring it to light. Today, on 15 hectares of vineyards—some historic and pre-phylloxera—they craft authentic, expressive wines with purity and structure that captivate critics and collectors around the world.

The grapes for Chardonnay En Barbi Arbois 2022 come from the En Barbi vineyard, which has belonged to Domaine du Pélican since 2012. It’s in a prime location, south-facing and nestled in a natural amphitheater, offering ideal ripening conditions. This single-vineyard wine is fermented to highlight the rare character of the En Barbi terroir, in 350–500L oak barrels and foudres. It then matures for around 11 months in a mix of oak barrels (50%), foudres (30%), and stainless-steel tanks (20%), gaining remarkable complexity and texture.

Tastes Like

Intense aromas of lemongrass, white flowers like lemon blossom and acacia, green apple, pear, grapefruit, citron, toast, white peach, and honeycomb. Subtle notes of wet stone and flint add depth and character.

On the palate, it has crisp acidity, a rich body, and a velvety, creamy texture. Flavours of lemon, pear, white peach, lemongrass, citron, honey, and nutmeg, with a mineral, saline finish that lingers beautifully.

CHARDONNAY EN BARBI ARBOIS 2022 - DOMAINE DU PELICAN

Enjoy it with butter-poached lobster with parmesan and tarragon, chicken and mushroom risotto, grilled sea bream, creamy French cheeses like Morbier.

Orzo pasta with shrimps, finocchio and Arseniko of Naxos

600 g fresh shrimps

250 g orzo

150 g finocchio

50 ml. ouzo or white wine

50 g butter

40 g olive oil

1 teaspoon tomato paste

50 g Arseniko of Naxos

Fresh fennel

Freshly ground pepper

Salt

 

For broth

1200 ml. water

1 onion

1 carrot

2 cloves of garlic

1 sprig celery

1 sprig of thyme

1 bay leaf

4-5 black peppercorns

salt

 

Peel the shrimps and remove the heads, which are put in a saucepan to prepare the broth.
With a knife, cut and remove from each shrimp the black intestine. Rinse and keep the shrimp aside.

Put in the pot with the shells and heads, all the above ingredients for the broth and boil for about 20 minutes. Pass the broth through a sieve and keep it hot.

For the orzo, finely chop the onion and finocchio into thin slices. In a large-sized pan, sauté in olive oil onions and finocchio until they are softened and then add the orzo.

Stir continuously and when the orzo is glistening, add tomato paste, pepper, wine and start adding the hot broth. Add it in 5-6 doses, stirring regularly with a wooden spoon.

When the orzo is nearly done and you have 1 dose of the broth left, add it along with the shrimp, season with salt and a little more pepper.

Stir for 3 minutes and remove from heat. Orzo must be juicy and thickened. Then add the butter and the Naxos cheese and finely chop finocchio's green leaves.
Dangle lightly and cover the pan. Before serving, stir and add to each plate some fresh fennel finely chopped.

Notes
- You can add 3-4 anise seeds for extra flavor and taste
- We prefer fresh shrimps but it is not necessary
- Alternatively you can use a spicy Gruyere
- Orzo can be made with other seafood such as shellfish, squid or cuttlefish
- Be careful to remove the orzo from the heat while it is quite juicy and al dente because ti tends to absorb the liquids and continue cooking
- You can add some sundried tomatoes
