Why do we love it?

The Chardonnay from Girlemis Winery is exactly what you would expect from a refined and delicate vinification of the variety. Just as the Girlemis family has accustomed us to, this is another elegant Chardonnay. Its discreet oily feel, creaminess, and impressive juicy fruit aromas will not leave you unmoved.

Girlemis Winery is a family affair that began in 2007, with studies carried out to determine which would be the best varieties to plant in the Domokos region. In the 350 acres of privately owned vineyards, the team of viticulturists and oenologists worked with immense experience to highlight a special and so far uncharted terroir. From the first moment until today, it seems that everything has borne fruit, since the wines they produce never cease to impress us.

Chardonnay is another one of them and comes from a vineyard that is approximately 20 years old. The vinification was masterfully carried out under specific temperatures that helped preserve the rich aromas of the fruit, while the maturation with the fine lees for 6 months in French oak barrels gave it an elegant oily feel and creamy aromas. The wine was finally bottled unfiltered and remained in the bottle for a whole year before consumption, which added extra volume and complexity. Very provocative!

The Chardonnay of Girlemis Winery is one of the samples of the variety that you must try and will always get you out of a difficult situation wherever it is found.

Tastes Like

In the glass, it is lemony with greenish highlights. Rich aromas of lemon, peach, bergamot, ripe pineapple, and jasmine flowers, framed by notes of vanilla, butter, cream, and hazelnut.

In the mouth, it is full-bodied, with crisp acidity and a fatty texture that balances it. Aromas of juicy fruit, mainly peach, apricot, pineapple, cream, vanilla, and caramel, create a long-lasting aftertaste.

Try it with blanket chicken, oven-baked lasagna with fatty cheeses, or pork roll with cold cuts and herbs

Lasagna in the oven with mushrooms and prosciutto

Ingredients 

  • 20g butter
  • 2 onions, chopped
  • 3 cloves of garlic, melted
  • 750gr Portobello mushrooms cut in half
  • 15gr dried porcini mushrooms soaked in 150ml of hot water
  • 2 tablespoons of fresh thyme leaves
  • 200gr thin slices of prosciutto
  • 200gr grated mozzarella
  • 8 leaves of fresh lasagna
  • 2 tablespoons panko
  • 2 tablespoons grated parmesan cheese 

For the béchamel: 

  • 100gr butter
  • 100gr flour
  • 850ml semi-skimmed hot milk
  • 3 tbsps. grated parmesan cheese

Directions 

Preheat the oven to 180 ° C. Melt the butter in a pan and cook the onions until they are softened. Add the garlic and cook for a few more minutes. Add the Portobello mushrooms, the porcini after you drain them and thyme. Cook for 15 minutes or until softened. Add salt and pepper according to your preferences. 

For the béchamel, melt the butter in a saucepan and gradually add the flour while stirring well. Allow the mixture to saute for a few minutes and then add the milk, by stirring continuously until it thickens. Add salt and pepper. Finally, add the Parmesan. 

In a pyrex pan, apply the 1/3 of the mushrooms, prosciutto and mozzarella. Lay on them a layer of lasagna and 1/3 of the béchamel. Repeat, and finish with a layer of béchamel sauce. Apply panko and Parmesan on top and bake in the oven for 45 minutes or until golden.
