Why do we love it?

Maybe you've tried MicroBio Winery's Prorogos Roditis, which is a big hit. Now comes their Chardonnay from their oldest vineyards! Another creation of Nikos and Dimitris Koutsodimos from Gastouni Ilia where the 60 acres of organically cultivated family vineyards are located.

Chardonnay MicroBio Winery is reminiscent of the French full bodied Maconian Chardonnay (Mâcon), because of the very ripe stone fruits and also the oiliness that you will find when tasting it. And we have more. MicroBio Winery is one of the few Greek wineries that applies certified principles of biodynamic cultivation. In addition to Chardonnay and Roditis they grow Mavrotragano and Augustiatis while experimenting a lot with other international varieties.

Chardonnay MicroBio Winery comes from old vines of around 40 years of age that are cultivated according to the principles of biodynamic cultivation. The very low yields, and early harvest give its great concentration. Before being released to be in your glass, this Chardonnay matured for 6 months in the tanks and in the bottle.

You on the other hand, can enjoy it now or even 5 years later!

Tastes Like

In the glass it is yellow with golden highlights. Pure stone fruit nose with nectarine, peach and apricot standing out while a bit of lime and honey complete the whole.

Full fat mouth with nice fruity intensity and moderate (+) acidity. Fatty and persistent aftertaste.

PAIR IT

Pair it with chicken with zucchini, oily fish, or pasta with vegetables.

Chicken with zucchinis

  • 1 kg. chicken breast
  • 750 gr. zucchinis
  • 1 onion
  • 2-3 green onions
  • 1 chicken stock cube
  • 100 ml. olive oil
  • 2 eggs
  • 2 lemons
  • Salt
  • Pepper

 

Once the breast is cut into smaller fillets, mix in a bowl half the olive oil along with the chicken stock, until a mixture is made and the chicken is dipped. Put the fillets in a non-stick pan until they are evenly browned. Transfer the fillets to a saucepan and, in the pan, add the onion and sauté it in medium heat. Then mix the onion with the chicken. Put the pot on medium heat and add 1 cup of hot water. Simmer for 20 minutes, add zucchinis and chopped green onions, plus freshly ground pepper and salt if necessary.

Prepare the egg yolk by whipping the egg whites, add the yolks, the juice from 2 lemons and finally the hot liquid from the pan.

Pour in the egg sauce, and keep churning until it has been incorporated into the food.
